this zucchini bread recipe sucks. it flopped. the batter never rose, or not enough. I checked my baking powder and baking soda and neither were expired. so I checked another zucchini bread recipe I used in the past and believe it or not, it is the same exact recipe, down to the last nut. but my old recipe stated to bake the batter @ 350 degrees for 50 minutes, not bake at 325 degrees for 50 minutes like yours did. the first time I made zucchini bread using this older same recipe baked at 350 degrees it came out perfect.
