Avocado Delight
I liked this however had to change it up a bit for more flavor, less liquid. I used 3-4 plum tomatoes, 3 avocados, 1 can pimento, 2 fresh jalopeno peppers, 1/3 cucumber, 2 shallots, 2 large cloves garlic, cilantro seeds, and 3 tbsp olive oil. It made a huge batch that I could enjoy for 3 days on top of nan bread, or in a wrap or with some healthy crackers. I make this all the time now as anything with avocados is a charge of antioxidants, great saturated fats, and a wealth of additional nutrients.

Beef Stew VI
This is a very good recipe and on my third try at it I made a few modifications. I used 8 cups water, 3 leeks instead of onion, added some white wine, a spoonful of paprika, 2 cloves garlic, tsp of Vegeta, used about 3 tbsp of tapioca starch instead of corn starch, and used olive oil instead of vegetable oil. I don't like very thick beef stews so to me this came out just right and the wine, paprika, leeks, and garlic added a zesty flavor a somewhat reminiscent of goulash that made this a standout recipe. Excellent!

Luscious Lima Bean Soup
This turned out just heavenly. I made a few adjustments namely: 2 leek bulbs instead of one, one large clove garlic, heaping teaspoon of Hungarian paprika, saute in coconut oil and added olive oil later (3 tblsp), 2 chicken bouillons and 2 tsp of Vegeta and a few drops of liquid smoke. I used 3 cups of Lima beans and used 8-9 cups water and voila a thick soup made for a king! This is going to be one of my favorites.
