Baked Potato Skins

divine. used evoo instead of vegetable oil. Otherwise, made as written. Will be making these on a monthly basis otherwise I will be quite a bit heavier than I am now!

Chicken Puttanesca

Good flavor, not the flavors my family usually goes for but it was liked by all, even the picky one. I made the recipe almost as written. I used 1 teaspoon of anchovy paste and 1 tablespoon capers. Really fast to make which means that I will be making this again but not weekly.

Buttermilk Syrup

I omitted the baking soda as well as another reviewer and I don't think it was missed. The final product is DIVINE! And it uses everything I always have on hand :-)

Best Brownies

Great combination of chewy and crunchy. The frosting was amazing! I may add mint extract to the frosting next time for a change of flavor. I doubled the recipe and cooked in a 9x13 pan for 30 minutes.

Mint-Chip Ice Cream Roll

First time making something like this and the cake turned out ok...a little dry so next time I would add some flavoring like mint or vanilla. Also, I rolled it into a towel to cool like directed, then, when unwrapping it broke and fell apart. I would be willing to try this recipe again but would need some suggestions on how to correct the breakage issue before doing so.

Pancakes

I had to make my own self-rising flour according to the recipe I found online. With that said, the pancakes turned out just OK. They were fairly dry, even with syrup. Their saving grace was that I added blueberries, which added moisture. I don't think I will make this recipe again, but I learned how to make self-rising flour in case I ever need to again.

White Bean Chicken Chili

My hubby's fav recipe as of first bite. Substitutions were 2-10 oz. cans Ro-Tel Lime & Cilantro diced tomatoes for regular diced tomatoes, 4 fresh tomatillos for canned tomatillos, canned turkey for canned chicken, large shallot for chopped onion, large jalepeno (removed seeds and ribs) for canned chilis. (That is what I had on hand comparable to ingredients listed). This chili has a KICK! My 2 year old had 4ths. 8y/o son added sour cream to bring down the heat in his. The spices were perfect! I will search for no other "Chicken Chili" recipe. Of course, it may not turn out the same twice in a row...that's the beauty of it!

Spicy Black Bean Empanadas

Amazing! All three kids and hubby devoured them. My 2 year old was eating the filling out of the bowl with a spoon almost faster than I could make the empanada. Followed the recipe as written and it was perfect!

True-Blue Potato Salad

Hubby and I love this recipe! Made it with the exact ingredients but did combine everything but the potatoes first, then added in the potatoes and a little blue cheese on top to finish. 2 year old loved it as well!

Green Bean Blue Cheese Salad

I made this recipe exactly as described and it was yummy but with too much oil. The 2nd time I made it, I doubled everything but the oil and vinegar. I have handed out this recipe so many times after our BBQ last week, I ended up just referring everyone to allrecipes.com to find it themselves!! Permanent addition to my cookbook!

Swedish Meatballs I

I made my evaporated milk from powdered (so not full fat) milk since I didn't have any cans on hand. I added 2 cloves garlic and a little worchestershire sauce. I make this for company and everyone loved it. Great recipe...thank you!!

Seven Layer Taco Dip

I made this recipe in about 20 minutes. I left out green peppers because of preference but got RAVE reviews at the party I took it to. I have added it to my party list of foods to quickly prepare and to print out the recipe to pass along :-)

Basic Baked Spaghetti

Made my own spaghetti sauce for spaghetti the other night and we didn't want to eat spaghetti one more day but made WAY too much. Topped with sharp cheddar cheese and parmesan and finished the whole thing off. Very easy way to use up leftover spaghetti without feeling like you've eaten spaghetti over and over!! Both boys loved it as well as DH and MIL.
