Mamon (Sponge Cakes)

A VERY GOOD base for all kinds of desserts, depending on how you fill or glaze it. I made it in one BIG round cake and so needed a 50 minutes cooking in the oven (last 15 minutes I reduced heat though). My tiny changes : no cream of tartar, replaced half water-half orange juice by the whole orange juice. My suggestions : served with strawberries and wiped cream : yumyumyum ! (orange and strawberries fit together prefectly), second time served with apricot jam inside and a dark chocolate coat : yumyumyum again ! :-D

Lemon Chiffon Pudding

These proportions are definitively for TWO people and not 4, as you have to try a second piece ! VERY good and light ! Used half of the sugar for a better diet and was still making a yummy dessert (we had it cold). I'm sure too that lemon lovers would prefer 4 instaed of 3 tablespoons of lemon juice.

Broccoli and Ramen Noodle Salad

NO cooking for the noodles ! as others said, they will absorb the sauce. NO sugar needed in the sauce, I used cider vinegar and sesame oil (to keep the Asian theme) Dont miss the peanuts, they really add the final touch ( and I dont think that mixing them with sunflower seeds is a good idea)

Wine Cookies (Original Italian)

After reading all these reviews complaining about not enough sugar, I thought : finally a good European cookies recipe ;-) and that was true ! I agree 100% with the comments about these bities being far from any American "regular cookies" : they are made for adults able to enjoy the simple taste of life, far away from any regressive memory ! Very easy to do and very flexible (you can use Madeira wine, Porto wine, etc...add a tiny touch of gingerbread spices...) My suggestion : the freshest the best ! I'm definitively to try it again, with cherry wine and cinnamon... or maybe in a salted version with olive oil and rosmarin...

Crepes

Yes, it works ! I agree though that 1) butter has better flavour than oil 2) the waiting time is essential 3) the thinest the best ! You can add a little vanilla or dark rum in the dough. Hey, I'm French too :-)

African Sweet Potato and Peanut Soup

Delicious ! an unusual wedding of hearty tastes on your palast ! It will defnitively be a treat again for some cold evenings or spicy lunches. The orange/green/red colours in the pan were looking so joyful that I serve this soup without blending it... A great success indeed ! thank you very much.

Winter Chicken Bake

Wonderful combination of vegetables ! after reading the previous comments about dryness I decided the cooking method was the problem and not the recipe in itself. So I just steamed carrots,sweetpotatoes, apples and fresh cranberries, while my chicken legs (rolled in lemon pepper-paprika-chili-caraway seeds) were broiling in the oven... and it was just perfect ! Also I think you can skip the onion but the FRESH cranberries are a must have in this recipe.

Greek Lemon Cake

I intented to change nothing from the given recipe BUT it happenned that I missed the yoghurt ! oops ! ;-) Good news was the cake was still very good. Being a lemon lover and coming back from holidays with wonderful lemons fresh from the tree, I just put 2 of them, skin, pulp and juice into my food processor and found the resulting pulp was replacing at the best the zest and juice proportions : a wonderful tip if you have fresh organic fruits available ! I'm planning to do it again with a light white chocolate cover and candies decoration for a girlie party.

Kick'N Chicken with Mango Salsa

Delicious and refreshing - even without cilandro (I had none at home on that day). 1/2 red onion + 1/2 mango + 1/2 red bell pepper + 1 lime (NOT juice but flesh in dices too) made a perfect 2 people serving.

Breaded Brussels Sprouts

So easy and quick ! I cooked the sprouts cut in quarters, directly in a frying pan with the butter and one glass of salted water - 6-8 minutes. When no water left, added the parmesan cheese, garlic croûtons, NO GARLIC and lots of lemon pepper. Serve hot !

Absolute Best Liver and Onions

Good basics ! no frills, everything has a purpose, everything works and the result is a hit. My roomie's comment was "if Mom ever had had THIS recipe I think that the whole family would have liked liver after all" !

Honey Dijon Brussels Sprouts

A wonderful surprise ! Didn't boil them in water 1st or you loose taste and vitamins. I lighty roasted them in a frying pan, added the sauce and let it stew under a lid. Also replaced the onion by black pepper (more my taste)and dill by oregano : perfect ! Served with grilled pork chops. First time that Brussels sprouts were getting that many compliments !

Pretty good and extra simple ! Made a light and hot winter dessert of it rather than a breakfast thing. I used brown sugar. Next time I'll skip the butter or use far less.

Soy Sauce Chicken

Very good but not outstanding ! Would wish the sauce to thicken a little (from the sugar) but it stays running just like an average soja sauce - it makes a lot of sauce ! Followed exactly the recipe but for the garlic that we don't like, so added a little more ginger to compensate. Very easy and quickly done so I'll keep it though .

Like other persons suggested I added lots of lemon juice and mint and it turned out very good and refreshing. I did NOT strain the fruit puree/juice as we like the pulp. I shall try again with different combinaisons of summer fruits.

Sweet and Spicy Sweet Potatoes

I wanted to try it at 1st "as it is", just went light on the onion-garlic taste I'm not fond of and replaced with ras-el-hanout mix. It was very good, spicy enough but not too much. Everybody loved it. I'm giving a 4 stars though for they were not really crispy (after 20mn oven). Shall surely try again but with 2 changes to suit better my French taste : a little less oil (2 spoons enough)and far less sugar - if ever some...

Irish Soda Bread

Very tasty ! LOTS of raisins - which was ok for us. Also don't be scared by the carraway seeds : the quantity is perfect to add a twist without any"pharmacical" bad taste.. The bread didn't raise like on the picture though :-( Maybe too old soda? But deserves an other try : was too good with butter or apricot jam...

Thai Pork with Peanut Sauce

I would have put 4.5 stars because really this recipe is very, very good ! Only surprise was that it was so mild - usually Thai cooking is pretty hot... So I shall definitively recommand it and do it again but with more chili powder and onion greens or chives (but NO garlic please !). Also doesn't need the chicken broth if enough coco milk and spices.

Chef John's Chili Chocolate Cookies

Now THIS is chocolaty ! Loved the "2 steps" expansion of the taste in mouth : 1st the chocolate and when you think it's all over then the pepper araises to tickle your senses - actually a kind of sexy cookies indeed ! ;-) Skipped the coffee flavour when making them again and liked them even better (that's why only 4 stars).
