Irish Tea Cake

Just back from a St Patrick's potluck where I brought this cake. Great success and yes it was "moist" enough for the party's taste ! Following all the advices I did double the milk quantity. I also choose to stick with the vanilla flavor ( but shall definitively try next time with the almond flavor). Now to make it REALLY Irish I had added in the dough 1/2 cup of whisky and some candied green cherries :-)

The World's Greatest Crab Recipe

I dont feel that garlic is a plus for enjoying at its best the real taste of crab so I replaced it by a few thyme leaves but this is all personal taste. Otherwise I cooked the legs in the oven (winter !)and it was really good, better than broiled and not too buttery.

Simple Whole Roasted Chicken

Was in a rush so only marinated my half of a chicken for 1 hour, but it still came out nice and flavourful. Shall definitively keep the recipe but double the spices and replace the garlic that I don't like with chili powder to boost it up.

Chicken Biryani, Hyderabadi Style

All in all a good recipe for a little bit of exotism. The amount of spices may look like LOTS but if you are gentle with the chile pepper it should suit any stomach. I had no trouble with the yoghurt. I had no ghee but added fresh butter slivers just before serving. Also I somehow missed the onions but shall definitively add some next time and yes well roasted before adding the chicken.

Paleo Cauliflower Rice

Sooo easy ! The texture is surprising for cauliflower and makes a nice change. My tips : *Dont put too many florets in the same time into the food processor. *I added 1 glass of water to help cooking the "rice" after it had been roasted with the olive oil. *Go versatile and add turmeric powder when cooking or process half cauliflower-half broccoli etc. Barbecued Italian or smoked sausages go perfectly with it.

Roasted Apples and Brussels Sprouts

I used fresh Brussels sprouts. Proportions for my taste would be a third of each : 1/3 sprouts, 1/3 onions, 1/3 apples. I sliced them all thinly as I was in a rush : this way cooking only takes 10 mn in a frying pan. The lemon does bring a plus. Great with chunks of bacon or ham on the top.

Irish Barmbrack

A wonderful idea but had to make some changes, that's why only a 3 stars. Used 1 cup of candied citrus in dices, 2/3 cup of dry cranberries and 1 1/2 cup of raisins. The dough was the problem and needed some "improvements" : I added a little pot of jam (any flavour, mine was red berries), 1/2 glass of whisky and 1 cup of melted margarine. Without those the cake would have been VERY dry ! I made it for an Irish Dance class. I made 30 "cookies" with these proportions (so reduced cooking time) and had hidden 5 dry beans and 3 coins. I had made a board explaining the ones who will get the coin will be rich this year and the ones with the beans will fall in love or/and have a baby. The funniest part was that the coins ended with the ladies and the beans to the gents !!! It was a hit and lots of fun !

New Potatoes with Caper Sauce

Roasted Root Vegetables With Apple Juice

I simply roasted the veggies together in a large pan, then added the juices and spices, covered and let them cook. I had intended to bring them for a holiday evening and microwave, but as the day was hot I served them cold in salad bowls with a light vinaigrette sauce.

Cold Melon Salsa

Perfect light side for grilled chicken breasts ! Was surprised how good is the tomatoe-melon mix. However for my personal taste the receipe needed a few changes, thats why is getting a 4 stars. 1) To avoid too strong raw onion taste I used 1 small onion/2p, diced and cooked in the microwave 2-3 minutes previous to addition in the salsa. 2) I skipped the cilandro which is only adding confusion to the mix flavour. 3) I used a whole lime (flesh and juice)and replaced the missing jalapeno by chili powder and GREEN pepper corn. Not even needed to rest a few hours, it's easy, interesting and quick and I would definitively do it again !

Like other persons suggested I added lots of lemon juice and mint and it turned out very good and refreshing. I did NOT strain the fruit puree/juice as we like the pulp. I shall try again with different combinaisons of summer fruits.

Kick'N Chicken with Mango Salsa

Delicious and refreshing - even without cilandro (I had none at home on that day). 1/2 red onion + 1/2 mango + 1/2 red bell pepper + 1 lime (NOT juice but flesh in dices too) made a perfect 2 people serving.

Greek Lemon Cake

I intented to change nothing from the given recipe BUT it happenned that I missed the yoghurt ! oops ! ;-) Good news was the cake was still very good. Being a lemon lover and coming back from holidays with wonderful lemons fresh from the tree, I just put 2 of them, skin, pulp and juice into my food processor and found the resulting pulp was replacing at the best the zest and juice proportions : a wonderful tip if you have fresh organic fruits available ! I'm planning to do it again with a light white chocolate cover and candies decoration for a girlie party.

Strawberry Cheesecake

Sorry, too rich for me, even using Philly light ! Also a few things didn't work. I found a little confusing the quantities indications, then using fresh strawberries I had to adjust the sugar. Following most of the advices I beated the cheese mix a very long time but it didn't turn to the aerian silk I was expecting, just more like butter ! The crust is perfect though and YES ! definitively needs the cinnamon. I ended up with not so much of strawberries spread compared to the cheese mix so it was hard to save some for the top decoration and so thick that the final result was FAR from the nice pattern of the picture. Soooo I guess I did something wrong somewhere... Strawberry cheesecake being a favourite I shall give it a 2nd try though, maybe with eggs whites in the cheese mix to make it lighter ? and with more fruits. I shall also separate the lemon juice (with the strawberries) from the vanilla (with the cheese). The final piece of cake was eaten after 4 days : the crust was then softer than at first but the taste nearly better as all the aromas had mixed and develop together.

Winter Chicken Bake

Wonderful combination of vegetables ! after reading the previous comments about dryness I decided the cooking method was the problem and not the recipe in itself. So I just steamed carrots,sweetpotatoes, apples and fresh cranberries, while my chicken legs (rolled in lemon pepper-paprika-chili-caraway seeds) were broiling in the oven... and it was just perfect ! Also I think you can skip the onion but the FRESH cranberries are a must have in this recipe.

Lemon Chiffon Pudding

These proportions are definitively for TWO people and not 4, as you have to try a second piece ! VERY good and light ! Used half of the sugar for a better diet and was still making a yummy dessert (we had it cold). I'm sure too that lemon lovers would prefer 4 instaed of 3 tablespoons of lemon juice.

Broiled Grapefruit

Pretty good and extra simple ! Made a light and hot winter dessert of it rather than a breakfast thing. I used brown sugar. Next time I'll skip the butter or use far less.
