Broiled Tilapia Parmesan

Reviewed: Jun. 14, 2007
The first time I made this for my family it was gone in minutes - everyone loved it! I followed the recipe exactly. The next time I made it I wanted to mix it up a bit, so before adding the butter-cheese-herb mixture on top of the fish I mixed in a handful of small scallops (since they are my hubby's favorite seafood) before spreading it on the fish - I didn't change the cooking times at all, and with just the 2-3 minutes under the broiler the last time it cooked the scallops perfectly, now they are a must everytime I make this! (You could probably do it with baby shrimp as well...)

I have a recipe almost exactly like this. When making it I just put it all in the blender!

Real Homemade Tamales

Reviewed: Dec. 8, 2006
These are great. I didn't like the sauce that is made for them though, too bland. Next time I will use 'Valentine Meican Hot Sauce' which can be bought at the supermarket (I buy it at Wal-Mart)... I added it on top after cooking and wished I had used it on the meat inside.

Slow Cooker Lemon Garlic Chicken I

Reviewed: Oct. 24, 2006
After reading reviews I tried cooking this with some changes, and I think it came out well... instead of 3 cups white wine use 2.5 cups chicken broth and 1 cup white wine and reduce the lemon juice to 1/2 cup. To reduce the liquid I also added a cup of dry rice in there and it had great flavor.

Slow Cooker Cherry Cobbler

Reviewed: Oct. 24, 2006
Instead of preparing this with all the dry ingretients and vanilla - just put the can of cherry pie filling in the bottom, then spread a box of Jiffy yellow or white cake mix on top (DON'T mix anything in with it - just dump the dry mix on top) then pour on 1/2 to 1 c. milk and 1 stick of melted butter or margerine - DO NOT STIR. Cook as directed...
