Cafeteria Carrot Souffle

Reviewed: Nov. 3, 2010
This smelled so good while it was baking. Everyone was excited to try it, but no one liked it. I can't explain why, but it had an almost artificial flavor to it. I hate to give any recipe such a low rating, but this was just not to our liking and we usually love carrots.

Creamy Au Gratin Potatoes

Reviewed: Nov. 3, 2010
This was very bland and quite dry. I really wanted to like it, but it was just disappointing.

Spicy Slow Cooker Black Bean Soup

Reviewed: Oct. 19, 2010
Excellent! Everyone went back for seconds (a few had thirds). I noticed some reviewers didn't soak their beans, but I soaked mine overnight. I used fresh garlic in place of garlic powder and added diced onion. Before serving, I pureed some of the beans with a little bit of the liquid then added it all back to the soup to thicken it. Outstanding!!

Peanut Butter Noodles

Reviewed: Oct. 12, 2010
Wow, this was excellent! Some reviewers recommended doubling the sauce, but I was using a larger package of pasta and adding chicken, so I tripled it. I did cut back on the ginger (not a huge fan) and the honey (I thought it would be too sweet). Perfect! I'll be making this again and again.

Scored Potatoes

Reviewed: Jul. 18, 2010
Really, really good! I followed another reviewer's advice and baked the potatoes cut side down for the first 30 minutes, then flipped them over to finish baking. I also added some extra seasonings. Not only were they delicious, they looked nice on the plate.

Baked Kale Chips

Reviewed: Jul. 8, 2010
I'm not sure what to say about these. They taste alright, kind of like roasted pumpkin seeds, but I didn't care for the texture. I would say they are more brittle than crisp. I'm glad I gave them a try, but I probably wouldn't bother making them again.

Fry Bread Tacos II

Reviewed: Jul. 8, 2010
Not bad, just not great. I was a little skeptical that the bread would have much flavor, but I was swayed by the glowing reviews. It turned out that I was right. The bread was pretty flavorless and never got crisp on the outside. I think it would be better used as pizza crust, because that's what it tasted like to me. On the plus side, it was extremely filling. I divided the dough into eight pieces instead of four and still, no one could eat more than one taco. It was fun to try, but I don't think I would make this recipe again.

Summer Beer II

Reviewed: Jul. 5, 2010
Really good! I'm not sure why it calls for a gallon sized pitcher, though. It fits perfectly in a 2 quart pitcher.

'Chinese Buffet' Green Beans

Reviewed: Jul. 5, 2010
We eat a lot of green beans, so I'm always looking for new ways to serve them. I've made this recipe a number of times, as written and with some tweaks. It is delicious as written, but I find the oyster sauce a little too strong (you get a bit of a "fishy" aftertaste). I prefer to swap the amounts of soy sauce and oyster sauce, but that's just my personal preference. Either way, these are delicious green beans!

Syracuse Salt Potatoes

Reviewed: Jul. 3, 2010
I was impressed that such a simple recipe could be so tasty! I've never been a fan of the texture of boiled potatoes, but these are completely different. They are super creamy inside without being mushy. The salt crust on the outside gives the impression that they will be overly salty, but they weren't at all. In fact, they were perfectly salted. I thought I had made far too many for the number of people I was serving, but everyone kept going back for more. I got rave reviews and requests to make them again from everyone. We had them with steak, but I think they would be perfect with almost anything.

Parmesan Potatoes

Reviewed: Jun. 22, 2010
I always feel bad giving a recipe a poor rating, but these potatoes were incredibly bland, even after adding some garlic and extra cheese. I also felt there was too much flour. More seasonings and some extra butter might help, but I didn't like them enough to try the recipe again with tweaks.

Key West Chicken

Reviewed: Jun. 22, 2010
If I could give this recipe more than 5 stars, I would! I served this for Father's Day and everyone raved about it. I followed the ingredients for the marinade exactly, but doubled them. The chicken marinated for 2 or 3 hours and was incredibly moist, tender and flavorful. The next day, I used the leftovers to make chicken salad and it was the best I've ever had. I finely chopped the leftover chicken, along with some sweet onion, then added a little mayo, a squeeze of lime and some ground black pepper. Served on a toasted bun with tomato and lettuce, it was perfect! Key West Chicken salad, who knew? Thanks, Tina, for a great recipe!

Basic Cream Cheese Frosting

Reviewed: Jun. 15, 2010
Delicious! My cake stuck in the pan and wasn't terribly pretty once I patched it back together, but I was able to hide most of it with this amazing frosting. I don't like cream cheese frosting to be super sweet, so I only added 2 cups of confectioner's sugar and it was perfect. This will be my go-to frosting recipe from now on!!

All-Around Spice Rub

Reviewed: Jun. 10, 2010
We loved this! It was delicious on chicken so we tried sprinkling it over burgers on the grill. That was fantastic, too. I can't wait to try it on ribs.

Oven-Crisped Potatoes

Reviewed: Jun. 6, 2010
Not bad, but a little bland even with the addition of some seasoned salt. I multiplied the recipe to get 6 servings. If you try that, don't add the full amount of butter!! The potato slices were practically swimming in it and I used less than called for. Not sure if I would make this again.

Grilled Spice Rubbed Chicken Breasts with Alabama BBQ Sauce

Reviewed: Jun. 5, 2010
Amazing! We didn't have any of Bobby Flay's Spice Rub, so we used our own. The Alabama Barbecue Sauce makes the chicken so flavorful and moist. We will use this recipe again and again.

Chocolate Syrup

Reviewed: Jun. 2, 2010
I'm not a fan of chocolate syrup, but my daughter likes to use it for chocolate milk. When I ran out of it, I decided to give this recipe a try. It was super fast, easy and inexpensive to make and my daughter loves it.

Jalapeno Popper Spread

Reviewed: May 30, 2010
Excellent! I made this for a party and everyone loved it. I added half of the parmesan to the cream cheese mixture and blended the other half with panko and sprinkled on top. Instead of microwaving it, I baked it at 375 for about 20 minutes. Served with tortilla chips. Everyone kept talking about how addictive it was!

Willoughby's Hot, Sweet, Sticky, Pass Me Another Napkin Chicken Wings

Reviewed: May 28, 2010
We love them prepared this way, they are the perfect combination of spicy and sweet, but you can easily adjust the heat by adding more or less pepper flakes and chipotle pepper.

Jumbo Fluffy Walnut Apple Muffins

Reviewed: May 23, 2010
Delicious and moist, but not the prettiest muffins I've ever made. They didn't rise much. I think they may require a touch more baking powder because of all the moisture the apples provide (just a guess).
