These were a big hit at the Christmas party. There were a number of vegetarians on the guest list, so I left out the bacon but added sea salt and an herb mix to the cream cheese & scallions. I didn't miss the bacon flavor like I was sure I would. Very easy to make, and they were quickly devoured.

Coconut Macaroons II

I've been making macaroons this way for years too, and I'm always having people ask me for the recipe. I do find that it matters which brand of coconut you use, as far as them holding together. Other than that, though, they come out perfectly every time.

Mum's Irish Apple Pie

Nime Chow (Raw Spring Rolls)

This recipe was a big hit with my guests, they disappeared very quickly. We served it with Tuk Trey, a Cambodian dipping sauce made by boiling 2/3cups of water, dissolving in 2/3cups of sugar, removing from heat and adding: 1/4cup of vinegar, 1/3cup of fish sauce, 2tbl fresh lime juice, and two minced cloves of garlic.
