Pressure Cooker Teriyaki Chicken

This was a great starter base. I made some changes... Used fresh pineapple, ginger and garlic instead of powder. Also used defrosted chicken breast instead of thighs. Added thinly sliced carrots. Cooked in pressure cooker for 9 minutes. I wouldn't recommend longer cooking for breasts to avoid the meat getting tough. I used tapioca starch instead of cornstarch to thicken the sauce. Served it with green beans and rice. My kids loved it. We all had seconds. Next time I'll add some yellow onions too.

MMMMM... Brownies

Best brownie recipe ever! I think the trick is using quality chocolate chips. I used Enjoy Life semi sweet chocolate chunks and they turned out perfect. Pulled these out of the oven right at 35

Quick and Easy Vegetable Soup

Great soup! Even the kids loved it. I've made it twice now with some variations each time and it's a great starter soup to tweak with whatever ingredients you have on hand. I added a boneless chicken breast and shredded it for a very hearty stew-like soup. I doubled the recipe and packed it for lunches and freezed part of it in mason jars for future easy meals. I also added some other ingredients to my bowl for an easy change to a mexican soup: sprinkled chili powder, dried cilantro, squeeze of lime juice, some shredded monterrey jack cheese and some avocado. Yummy! Better than restaurant quality. Would probably be yummy with some crushed corn chips too. Next time.

Chef John's Ham and Potato Soup

Best soup ever. I used low sodium broth and half & half instead of heavy cream. I also only had Russet potatoes at home and they were just fine. The potatoes ended up taking closer to 25 minutes to cook. I'd plan for longer cooking time than the suggested 40 minutes.
