Zucchini Herb Casserole

My husband and I LOVED it! I'm glad I read the other reviews because I think it made it a LOT more flavorful. I doubled the garlic and kept all the other spices the same. I used yellow onions instead of green because that's what I had on hand. I also put chicken bouillon in the rice so the rice had a little more flavor too. And lastly I used pepperjack cheese instead of cheddar. It turned out GREAT! And was gone by the next day.

Apple Pear Sauce

Tasted great! I left it chunky because that's how I like it. It did look more runny than I had expected but it didn't taste runny/liquidy

Springtime Spaghetti

This tasted so great! And super easy to make. I added some chopped onions to the dish and since I didn't completely have all the vegetables on hand I just threw in mixed vegetables with some summer squash. It turned out fantastic and I love all the vegetables in it.

Farfalle with Zucchini, Butternut Squash and Pecorino Cheese

Maybe I didn't give this recipe a fair trial because I changed 2 ingredients - I did't have Barilla's Farfalle and I didn't have Percorino cheese. I used shell shaped noodles and Parmesan cheese and mozzarella. I followed all the rest of the recipe until it said to put the noodles in the sauce. What sauce?! There isn't a sauce that was made... So I added stewed tomatoes. What I made tasted great.

Pumpkin Wheat Honey Muffins

Amazing! I didn't put raisins or walnuts in there but i added a couple teaspoons of wheat germ and flax seed. I also made a oat crumble for the top combining oats, brown sugar and melted butter. They tasted store bought!

Tomato, Cucumber and Red Onion Salad with Mint

My husband really enjoyed this. It's nice and refreshing. I agree with other reviewers that it needs to be served right away or else the salad gets too wet and juicy. We put it on top of a crusty bread which was great!

Butternut Squash Pizzas with Rosemary

Great pizza and easy to make. It was sweater than I realized it was going to be - probably from the butternut squash. We didn't measure out the Parmesan cheese and just sprinkled on as much as looked satisfying. Extremely tasty. I'll be making it again.

Quinoa and Black Beans

I love how simple this recipe is! It was extremely flavorful and tasty. My husband really enjoyed it too, who normally likes meals more with meat in it. I omitted the cilantro though because we don't like it, and I didn't have corn on hand - but I'm sure the corn would've made it twice as much better.

Playgroup Granola Bars

The only change I'd make to this is I like my granola bars more chewy. I recommend cooking them for 18 minutes instead to keep them chewy. 20 minutes for me (living in Utah) was almost too long for me. Besides that, I really like being able to make homemade granola bars. These are wonderfully tasty. I don't have wheat germ on hand, so I haven't been using it. But I've been putting a variety of chopped up dried fruit, nuts and raw pumpkin seed (I highly recommend them).
