Miss Betty's Super Quick Dinner Rolls

These were OK. Not great, but what do you expect from a recipe with 3 ingredients? My kids liked them. I added 1/2 tsp. garlic powder for a little kick. I will probably make again when I'm pressed for time. They were quick, that's for sure.

Chicken Enchiladas II

I made a few changes, but this was delicious. Instead of adding the first 4 ingredients, I used 1/2 package of taco seasoning mix and cooked with the meat per package directions. I added the sour cream to the soup, however I also put a strip of sour cream on each tortilla. I did not add the cheese to the saucepan; I sprinkled it directly into each tortilla on top of the sour cream. I then added a small amount of soup mixture (soup, milk and sour cream) to the chicken and placed the chicken mixture on top of the cheese in each tortilla. I then finished as stated in the directions. Very creamy with just a touch of Mexican flair.

Pleasant Pork Chops

I made this just as the recipe said and it was very good. A nice change from plain old pork chops. The chops were tasty even without the sauce and very tender. I thought the sauce added just the right touch. I'll definitely make this again.

Chicken Vicious

This was really good. Even the kids liked it! I only used 1 cup vinegar as my husband isn't crazy for the taste, but he said he couldn't even taste it. I used 1/2 cup white and 1/2 cup brown sugar and sauteed the chicken with raw garlic to give it some flavor. I also added some sliced carrots and white onions as well as the peas. I will definitely make again.

Ruby Red Layered Salad

My family really liked this salad. It's a bit tart, but the pineapple takes away some of the bite. Thought the sour cream would be too much, but it tied it together really well. Will definitely make again.

Ninety Minute Cinnamon Rolls

These were great. I'd never put cinnamon rolls in a muffin pan before--what a good idea. No more flat, spread out cinnamon rolls. The only thing I changed was I only used 6 T. of butter in the cinnamon filling instead of the 8 T. called for. I also drizzled a butter/powdered sugar glaze over them when finished. They were awesome. Will definitely make again!

Texas Pork Ribs

These were very good. They were a little salty for us, but the taste was good. I added some liquid smoke and honey to the sauce and it turned out great. Will try again with a few adjustments.

Three Cheese Manicotti

This was very good. To the cheese filling, I added 1/2 pound ground beef, some Italian seasoning and substituted cottage cheese for half of the ricotta. It was delicious!

Jamie's Cranberry Spinach Salad

This recipe was great. Tart and sweet at the same time. I actually left out the oil by accident but it turned out wonderfully anyway. Would recommend this for Thanksgiving dinner.

Chicken Pot Pie III

This was very good. I used a store bought pie crust and I used 1 can of cream of chicken soup and substituted sour cream and a touch of milk for the half can of soup. I also added a partially baked diced potato. My husband didn't care for the thyme so will decrease or leave out next time. Very quick, easy and delicious.

Double-Cheese Meat Loaf

Indian Relish

Yummy! I have had a similar relish and had never been able to find the recipe. This is it! I simmered it for 30 minutes, however, I ended up boiling it again for a few minutes at the end to thicken it up. It also caramelized the onions. Super!

Steak Stir-Fry

I used low sodium soy sauce, and it was still a little too salty for me. Next time, I will use a little less soy sauce and more water. I used stir-fry veggies to cut down on prep time. This was easy and tasty. Will make again with minor revisions.

Spicy Crispy Beef

Yum! This was great. It was spicy but not too much. I cut back on the ginger, but next time, I'll add the full amount. It was good served over rice. Takes a lot like what you may get at a restaurant.

Connoisseur's Casserole

Some unique ingredients mixed together to make a nice, creamy casserole. The almonds on the top were delicious--really added the perfect touch. I took this to a potluck and came home with none left. Very good!
