Busy Day Chicken Rice Casserole
I cut up the chicken into bite sized pieces, but other than that didn't change anything. The dish was a bit shallow, in my opinion. Maybe it would have felt more like a real casserole in a smaller dish? Taste-wise, it was quite good. I will probably make it again. I would also recommend opening the onion soup mix packet and dumping it into a small bowl and really mixing up the spice part of it. Mine was all clumped together and I had to break it up.

Oatmeal Jam Squares
They were okay. Nothing special, and pretty dry and crumbly. Tasty enough, but not enough to tempt me off my diet, which is saying something because I'm practically starving right now and everything looks amazing.

Swiss Chicken Casserole II
Delicious! Four thumbs up from our house! However, I skimped on the chicken. I only used two large chicken breasts, and cut them up into bite sized pieces before layering them on the bottom. I think this helped them cook more thoroughly, and also allowed us to take scoops of the casserole, rather than an entire breast--helpful when you're on a diet! I also added about a quarter to a half cup of drizzled water on top of the drizzled margarine, to help the stuffing soften.
