Easy Tortellini Soup

Absolutley delicious!!! I would cook the pasta seperately and add it in at the last minute so it doesn't absorb all the broth. Will definitley make this again! and again.....

one word: YUMMY. I added mozz cheese cubes and avacado. ALTHOUGH - not a fan of the red wine vinegar. i used balsamic instead. other than that: mmmmmmmmmm

Fresh Spinach and Sun-Dried Tomato Lasagna

Absolutley delicious! I did follow another suggestion and used an entire pouch of sun-dried tomatoes. I also would double the red sauce ingredients just because I like a lot of sauce. Finally, I substitued a zuchinni for the mushrooms, and I added a bit more nutmeg to the white sauce. Between 4 people we finished the entire lasagna in one evening!

Beef and Irish Stout Stew

Awesome!! Made it for an irish-themed dinner and everyone loved it. Served it over Irish Champ and soda bread (both recipies from this site). Excellent! I don't like beer but it just gave it a nice flavor. Will use more beer next time, actually. Definitely a keeper!

Apple Bars

DELICIOUS!!!! everyone (especially me!) loved them! they are very moist - exactly what I was looking for. I was concerned that the Granny Smith apple would be too tart, but it was perfect. I also added 1/2 cup of oats. This would be great served with a scoop of vanilla ice cream and some type of sauce - like a pecan carmel sauce or something. although just by itself is fanastic!!! definiely a keeper. thank you!

Easy Chocolate Covered Coconut Macaroons

one word: DELICIOUS!!! extremely easy (although very sticky!) Watch your baking times..i only had to bake the cookies for 10 minutes and they were perfect. Not thrilled with the melted chocolate chips...next time I would use the chocolate wafers from AC Moore.

Roast Chicken with Rosemary

WOW! this was great! We took the other suggestions and also stuffed the chicken with a lot of garlic and lemon slices in addition to the rosemary and onion. We also put some rosemary and a few slices of butter under the skin. We had a little over 4 lbs. of chicken and it cooked at 350 for exactly 1 hour and 40 minutes and was delicious! Will definitley make again. Thanks.

wow! excellent! I followed everyone's suggestions and did not add the water (doesn't even need it) and used enchilada sauce instead of taco sauce. Husband and I loved them!! Thanks!
