My Country Style Steak

My family really enjoyed this. I followed the recipe except instead of adding water I used a can of low sodium chicken broth. Tasted great. Next time I will add mushrooms and fresh onions too.

Suzy's Mashed Red Potatoes

These were wonderful and very easy to make. Instead of putting the cooked potatoes in a separate bowl, I always use a large pot strainer and drain all the water out of the pan that I cooked them in. I set it back on the burner that I was cooking on (turned off) and it keeps the potatoes warm and heats the added ingrediants. Thanks for a great recipe.

Baked Pork Chops I

This was excellent! My kids gobbled it up and asked for seconds. I love the wine flavor...next time I might pull back on the milk and add a little more wine. Also I agree with others that the time may be a bit off... my chops were boneless and about a 1/2 inch thick. I fried on high heat until crispy (prob only 2 mins on ea side not 5 as the recipe states). Then I baked them for 30mins w/o sauce and then 30mins with sauce. They were just perfect for us...tender, moist, and definitely not over cooked.

Caesar Salad Supreme

Great recipe. Easy to make. I use about a teaspoon of Anchovy paste instead of messing with chopping fillets. You can add more paste if you desire. I also cheat and buy the croutons. Maybe one day when I have time I will make my own. The dressing is fantastic and I always have people ask me for the recipe.

Awesome Slow Cooker Pot Roast

Awesome roast! I coated the roast with emerils steak rub and added the following to the recipe at the beginning: fresh sliced mushrooms, baby carrots, 3/4 c red wine, 1/2 sliced onion, 3 tablespoons flour, and I used 2 cans of mushroom and roasted garlic soup instead of just plain mushroom. Cooked everything on low for 9 hours. I served it with premade diners choice country style mashed potatoes that you just heat in the microwave for a quick and easy meal. VERY GOOD! My family loved it.

Clam Sauce with Linguine

After reading this recipe the basics of it sounded good but I wanted to spice it up a bit. I added some crushed red pepper flakes, capers, and I threw in some jumbo lump crab and raw shrimp at the end. The flavor was very good before I added the pasta to the pan. Once I added the pasta, I felt that there was not enough sauce for the 1 pound of pasta that the recipe calls for. So I felt like it was a little dry and some of the flavor was lost. I will make this again but only use 8oz of pasta instead of 16oz.

Holiday Chicken Salad

EXCELLENT! - I should have rated/reviewed this recipe about a year ago as I have served this now several times and always get lots of compliments. The only change I make is to buy a rotisery chicken and shred it (vs. cubed chicken breasts). It's a lot easier than cutting up chicken and cooking it and I personally prefer the consistancy of shredded chicken in chicken salad. I also serve it on croissants with a little green leaf or bib lettuce for added crunch and color.

Baked Dijon Salmon

I am a salmon lover but I thought this recipe was just okay. I may have put too much of the dijon mixture on the fish and it may have over-powered the taste. I may try this one more time with less sauce.

Old-Fashioned Chicken and Noodles

EXCELLENT chicken soup. Got rave reviews from my family (even my 3yr old). I tried making the noodles and they just weren't coming out the way I thought they should so I bought a box of dried german spatzel (like a tiny dumpling) instead. Turned out great and made the soup nice and hearty! I also added a bay leave and some dried parsley as others recommended. I also served this with bacon lettuce and tomato sandwiches. Will add to my list of favorites.

Baked Ziti I

This is a KEEPER! I followed the recipe exactly as written except that I adjusted the servings to 4 instead of 8. It was a perfect amount for a family of 4 people when paired with garlic bread and a salad. The only changes I would make next time would be to add a little more sour cream and a little more cheese...I might also try cooking sweet italian sausage out of the casing instead of the ground beef for a little more spice.

Cottage Cheese Chicken Enchiladas

These were very good...my husband loved them. I doubled the enchilada sauce, added chopped cilantro to the cheese mixture and used a store bought roasted chicken to save time from cooking the chicken breasts. My tortillas cracked when I rolled them up and put them in the pan and then fell apart when I was trying to remove them after cooking...I believe I read somewhere if you wet them in the enchilada sauce before rolling them they won't crack...I'll try that next time.

Chicken With Mushrooms

Followed some other suggestions and added a few of my own...sauted mushrooms first and added garlic and green onions. Added a can of golden mushroom soup and specified amount of chicken broth to pan with mushrooms...heated just until the broth and soup came together. Used panko bread crumbs and added italian seasoning and salt/pepper. Split very thick chicken breasts in half (length wise) so they would cook quicker (plus I'm not a big fan of big thick chicken breasts). Fried chicken in another large pan with an oven proof handle. Poured mushroom mixture over chicken in skillet (omitted the cheese) and placed in oven (didn't want another dirty pan to wash). Cooked up some egg noodles, put chicken on a separate plate and added noodles to the hot pan with the sauce to incorporate. Put sauce and noodles in a beautiful pasta bowl, placed chicken on top and added fresh parsley sprigs for garnish. Served with steamed asparagus. Nice meal!
