I love to cook, although I usually only cook for company. I also love to eat and drink, especially Greek food! As my profile shows, I like more exotic foods, but I take shortcuts whenever and wherever I can. Enchiladas, beef stroganoff, Greek dishes, like roast lamb and dolmades and basically anything with cheese. Making dolmades at home. I'd made the chicken poblano enchiladas that I submitted here at least a dozen times when we had important company over for a special lunch. Even though my wife nags me about covering the dish with foil, I've never done it and never had any problems until this one time. I went into the kitchen to find that my enchilada casserole had burned on the top. :( Fortunately, my wife pitched in on the damage control and we were able to quickly peel the burnt cheese off the top, add a new layer of other cheese and pop it back into the oven to melt the cheese on the top again for a few minutes. We served it, with no one the wiser, but then found out the one person didn't like mushrooms. So, he ended up with a pile of mushrooms (fortunately, I didn't chop them very fine) on the side of his plate, but still said it was yummy!
