Peanut Butter Frosting

I followed the recipe but split the difference with regard to powdered sugar. The recipe calls for 4 cups; others suggested 2 cups. I used 3 cups. (I also had to add a T more milk to smooth it out.) It piped beautifully and tasted great!

Chicken Stuffed Chiles

Great recipe! Almost like Chile Rellenos but without the egg wash and with the addition of chicken. Loved this! Wanted to repurpose some shredded chicken and this was perfect! I, too, used poblano peppers. They turned out great! My husband has already asked me to make it again!

Easy Tuna Casserole

I'm not easily impressed, but this was delicious! I used what I had on hand and am exceptionally happy with the result. I only had cream of mushroom soup, so I used that instead of cream of chicken. I increased both the tuna (used 2 cans) and macaroni to fill my 13x9 pan. I took other reviewers' advice and added milk. (I had a can of evaporated milk, so I used that.) I threw in some frozen mixed vegetables because I didn't have peas, as others suggested. I was short on fried onions, so I used what I had and made up the difference with panko bread crumbs. DELISH!

Apple Pork Chops and Stuffing

Excellent recipe with one change: use fresh apples and follow the suggestions provided by Mrs. K. (Add onion, garlic, thyme, rosemary and a touch of cinnamon to the apples to make them more savory than sweet.) I'll be making this again!

Chili Rellenos Casserole

Even better the day after! Made this with 1lb. ground beef. Browned the beef with diced onion and cumin and added it before the second layer of peppers. I couldn't find whole canned peppers, so I roasted fresh poblanos and used them instead. Like others, I used enchilada sauce in place of the tomato sauce the recipe calls for and I broiled the top layer of cheese to melt it. Very good!

Fresh Southern Peach Cobbler

This cobbler just came out of the oven and I'm in LOVE! It is, by far, the best cobbler I've ever tasted. The flour mixture is just sweet enough for me. (I don't like biscuit-like cobblers, so this being sweeter is perfect.) It doesn't need ice cream or whipped cream--just serve it up with a glad of milk and you'll get rave reviews!

Salsa Chicken Rice Casserole

This recipe is delicious and incredibly easy to make! We loved it so much, I made a second batch the day after I made the first! I made it almost exactly as the recipe directed, with one exception being that I used Pepper Jack cheese (rather than Monterey Jack), since I had it on hand. The second time I made the recipe, I made a couple other substitutions, just to use up some other items in my pantry. I used 2 cans of Cream of Celery soup (in place of the Cream of Mushroom and Cream of Chicken that the recipe suggests.) I also used exclusively cheddar cheese, since I had a lot in the fridge. It turned out well even with those changes. When I make this again, I'll use Pepper Jack and Cheddar; that really povided nice flavor, color and texture!

Sour Cream Chicken Enchiladas

AMAZING! With just a few slight modifications, this will be the best enchilada dish you've ever had! Definitely substitute corn tortillas for the flour tortillas in the recipe. I also suggest using a blend of cheeses--not just the cheddar. I paired it with a winter sangria and it was spectacular. Will be adding this to my authentic mexican repetoire!
