This recipe is wonderful! I can't tolerate too much heat, so to tone it down I only use 1/4 tsp cayenne pepper and a fresh diced jalapeño with seeds and ribs removed. The first time I made it it was incredibly hot, but I successfully turned down the heat with HONEY, yes that's right, honey-it doesn't affect the flavor at all. A tbsp of honey cuts the heat in half and it was super delicious, though still a little hot. I also boil my chicken (I used 2 fresh chicken quarters with skin on) to make my own stock-with a little salt. Then just remove the skin and shred it by hand after its done! Delish!
