Banana Bran Muffins

These are fast, easy and yummy little muffins. I made these as mini muffins, for my daughter's class. The recipe is very forgiving. I had to make some substitutes, (I made them 2 hours before the class picnic, and didn't have everything on hand.) I used strawberry banana juice, and instead of OJ and natural wheat bran instead of the oat bran. I've made these about 10 times now, and they always turn out great.

Made this tonight and it was AMAZING!! Used shrimps, cod, scallops and 1 can (juice and all) of baby clams. I also used 1 250ml bottle of clam juice, instead of water. Used diced tomatoes and crushed tomatoes. As a side, we had thinly sliced fennel drizzled with olive oil. I also tried the stew with a touch of balsamic on it soo good!!

Oatmeal Chocolate Chip Cookies I

These beautiful cookies just came out of the oven and they are wonderful. I made them exactly as the recipe states, and they turned out great. Thanks for the great recipe! I'll be making these again and again!

Roasted Vegetables

This is my go-to recipe for roasted veggies! It's in the oven right now! I've made it many times and I've used whatever fresh veggies that are in my fridge. Tonight its potatoes, beets, carrots, onions, and sweet potatoes. *Just note if using asparagus and broccoli they cook faster, so add them a litttle later.* Yum!

Grandma's Sloppy Joes

We just had these for supper!! This recipe is AMAZING!! I doubled it, and only put in as much cloves as I knew my family would enjoy. That is what is nice about this recipe, you can modify it to your tastes!

Health Nut Blueberry Muffins

These muffins are wonderful! Easy to change to the ingredients that you have on hand. I even added raspberries, and strawberries when I only had half the amount of blueberries. Very simple recipe with great results.

Gourmet Mushroom Risotto

This is an absolutely wonderful recipe! This is the second time I've made it, the first using wild mushrooms(1lb in total) and the second time, I added a few mushrooms and green beans! Definitely will be making this lots more.

Sweet and Sour Chicken I

This was delicious! My whole family agreed that it was better than take out! I had to do a little "tweaking" to the sauce to get it how we like it, (not too much vinegar). I also took the suggestion from EE2ME and SHELLS and added 1 1/2 tsp baking powder and 1/2 tsp salt to my flour mixture, because I didn't have the self rising flour. Worked perfectly! With the left over batter, we made dough balls and covered them with cinnamon and sugar!

Baked Trout Fillets

This was so good! My kids ate up every bite and asked for more!! I am making it again, but this time with salmon. I am guessing it will be just as delicious and moist as the trout was.

This was so delicious! Made it for a dinner party, had roasted potatoes and t-bone steak on the BBQ with it. Tasted wonderful, got rave reviews. Nice with a glass of red wine!!
