Simple Shrimp Pasta Salad

Simple and elegantly good! I sauted the shrimp in olive oil and butter while the corkscrew pasta cooked. I'll be making this again and again - thanks!

Taco Soup VIII

This certainly isn't soup! It's a dip and very good but nothing that special as the other reviewers make you believe. Rachael Ray has a fine Mexican dip for chips that I prefer over this. There isn't even any water included here to make a thinner 'soup' appearance. Weird!

Pumpkin Cookies II

Jimmy Dean Sausage Stuffed Pasta Shells

Pretty good but the ricotta was overpowering the flavor of the sausage. Maybe if it were 1/2 the ricotta and added mozzarella, it would have been better. Overall ok but you won't see me eating the leftovers...and it made heaps!

Bow Ties with Sausage, Tomatoes and Cream

Excellent! This is a simple and delicious pasta dish. The cream takes out the acidity of the tomatoes. Even my 6yr old ate it so you KNOW it's a keeper.

Mexican Shepherd's Pie

Absolutely delicious!!! I took it to a potluck and it was a hit. I doubled the corn muffin mix as reviewers had suggested which was perfect - one box would not have been enough to cover. I used 1/2 the water suggested in recipe which was perfect - the amount in recipe seemed like it would make it too watery. I used Mexicorn which was great in it; also put 1 cup of shredded cheddar cheese ontop before the cornbread layer. So good!!!

Chicken Enchiladas V

Very tasty. I used one of the review ideas and cooked the chicken in chicken broth and water in a crockpot on HIGH for 4 hours - this made it perfect for shredding. As for the recipe, I doubled the sour cream and soup so I'd have more sauce mixture which seemed ideal. I sprinkled a few diced tomatoes ontop rolled tortillas before topping with cheese. Add shredded monterey jack cheese with the cheddar.

Chocolate Eclair Dessert

VERY good and ideal to satisfy a chocolate craving. I used 3 packages of graham crackers because 2 wasn't enough and the pudding mix comes in 3.5oz boxes so I used 2 of those - couldn't find the 3 oz?! I used light cool whip like that made a difference in calories. Ha! It was alittle messy to frost the top graham cracker layer but it's worth it!

Baked Teriyaki Chicken

My husband liked this more than I did so I guess I'll be making it again sometime for him but I didn't care for it. I used chicken tenders. I think if it was to be marinated it would be better flavor. I served it on Basmati rice which was a good combination.

Easy Honey Mustard Mozzarella Chicken

This turned out pretty good! I sauted chicken tenders in olive oil with herbs and shredded it. Also used cornbread dressing which was yummy. The soup was alittle overpowering over it all but next time I just won't add as much.

Onion and Sausage Pizza

OH so yummy!!!!!!!!!!!!!!!! I made my own crust rather than the bread idea. I used two small red onions; didn't use the olives. The combination of flavors was wonderful! Such a recipe to cherish - thanks oodles for sharing it with us!

Lasagna Alfredo Roll Ups

These turned out good although the alfredo sauce was alittle overpowering - next time I'll use less. The filling was similar to a manicotti recipe I use sometimes but still good ~ the green onions were a nice addition for taste.

Awesome Slow Cooker Pot Roast

This roast was really amazing! I halved the recipe because my Angus chuck roast was 2.5 lbs. I seasoned the meat and browned all sides in a skillet before I put it in the crockpot. This seals the flavor!!! Then I mixed the cream of mushroom soup, onion soup mix, 1 cup beef broth and 1/4 cup water; then poured it over the meat. I added carrots and sliced onions ontop. Covered and cooked on High for 1.5 hour and then cooked on Low for 6.5 hours. Sooooooo yummy!

Best Ever Pie Crust

Excellent crust! I used it for individual strawberry pies and it was perfect. I used COLD water and chilled the shortening for about 30 minutes. I'll surely be using this recipe again and again.
