Delish! Followed almost to a "t"...I didn't have regular instant flakes, so I used Betty Crocker loaded potato flakes (just one of the 2 packs in a box).

Chicken Tortilla Bake

My husband and kids liked this a good bit ~ but it was way too bland for me. I have had very few dishes that have had corn tortillas in it that I have liked and this is NOT one of them. The mixture seemed too runny even afterwards. Maybe it would have thickened up after it sat a while? I followed the recipe exactly as written.

Spiced Butternut Squash Soup

Wonderful taste ~ tho I couldn't get the texture right. I don't have a immersible blender or a counter top blender, so that was no one's fault but my own. I didn't use half and half ~ I used skim milk to cut down on the cals and I didn't have cooking sherry so I used a bit of red wine that I keep on hand. Was out of nutmeg. Good and filling :)

Pepperoni Casserole

This was pretty good. My kids and husband seemed to like it. It was really, really greasy, though. I followed the recipe as written with the exception of adding chopped up bell pepper and a bit of fresh onion (we like that on pizza) and I only did half of what the recipe called for in pepperoni. Used whole wheat pasta. The taste was ok, but because of the greasiness, I won't make it again.

Playoff Meatballs

The only things that I did differently were to cut the ingredients in half because I only had a pound of ground meat. That was PLENTY of food for my family of 5!! I used ground turkey because we don't eat red meat and I made my own sauce because I didn't have any on hand. The family loved it :) (My sauce: 1 cup ketchup, 2 tbsp. Heinz 57, 1 tbsp. A1, 1 tbsp. brown sugar, 1 tsp. yellow mustard).

Cheesy Catfish

Omgosh, SO good! I live in the boonies of GA...catfish is the norm here but most of the time it is fried. this is a wonderful alternative to those of us who don't care for fried foods!! This was SO good. It was golden and crisp, tho I DID have to cook it longer than the 15 mins. suggested time. It was more like 30-35 mins when it was all said and done. I followed the recipe as is with the exception of not adding paprika (didn't have it) and with adding garlic powder to the mix. I soaked the fish in the liquid and then heavily coated it with the flour/cheese mixture. It is wonderful, thanks for sharing!

Slow Cooker Buffalo Chicken Sandwiches

Really, really good! We had it for our LOST party ~ was great with some apple coleslaw on top. Yummm! I used Franks buffalo sauce and it was very spicy ~ but was yummy!

This was really good ~ aside from being too spicy to feed to my kids!! I love spicy but even I was getting a bit teary eyed. Leave out the jalepeno and you will be good!!

Italian Sausage and Tortellini Soup

Yum, yum, yum, yummmmm...I would give 10 stars if I could as would the rest of my family (my hubby, picky 10 1/2 year old, 4 year old and 7 year old) all loved it! The ONLY thing I did differently was that I used spinach instead of green beans as I knew that spinach goes very well w/ cheese tortellini :) I did add a extra cup of broth and 2 cups of water to cook out while it simmered.

Delish! We made turkey bacon and cheese for the kiddies to take to school and also strawberry :) The only thing I did differently was cut the sugar back to 1/2 cup.
