Hawaiian Bruddah Potato Mac (Macaroni) Salad

This is a wonderful basic recipe. I used less potato and more macaroni, and less curry. I left out the peas, too because I didn't have any, but you can use whatever amounts or combination you like, and it will be good. I served this next to huli huli chicken, oven kalua pork (both from this recipe site)and plenty of steamed rice, and my guests were transported to Oahu.

Huli Huli Chicken

This marinade made the chicken so juicy, my guests raved. I made extra marinade, so that my husband could baste with marinade that had no raw chicken juice in it. He grilled it on the barbeque grill, and turned it every 10 minutes, but he forgot to baste it much, and one batch, he did not baste at all. However, the chicken was still very flavorful and juicy. Sometimes breast meat on the grill can get dried out, but this had running juices after grilling! It would probably have more marinade flavor if you remembered to baste it as directed, but even if you don't, the flavor and juiciness will be wonderful. We will use this recipe again.

Oven Kalua Pork

I did a test run of this recipe, before a luau party. I did not have liquid smoke, so I used 2 T. minced ginger, 3 minced garlic cloves, and 1 T. Hawaiian salt (for each roast) to rub all over the pork roast before wrapping (fat side up) tightly in heavy duty foil, and placing in a roaster. I roasted it at 300 degrees for 6 or 7 hours, 6 hours for a 5 pound roast (test run), 7 hours for two 7 1/2 pound roasts (party day), in separate pans. I used two forks to pull the pork into tender, delicious, juicy pork delight. Most of the guests asked for the recipe, it was that good. I did not add the extra salt after cooking; it was perfectly seasoned for our taste. I was surprised how juicy the meat was, since it releases a lot of juice to the pan. This recipe is a keeper.

Easy Chocolate Cupcakes

I tried this recipe tonight, because I was craving a chocolate cupcake. I cut it in half, but followed the ingredients and directions exactly. Half made 10 delicious cupcakes; I checked them at 18 minutes, and they were done. As soon as they cooled,I mixed up a small amount of vanilla buttercream, dunked them into coconut, and they were a great, quick treat.I suspect that the people who didn't like them didn't follow the recipe.
