Homemade Black Bean Veggie Burgers

Yum! Turned out delicious! I didn't have enough bread crumbs, so used some oats instead, and also didn't have green pepper so added extra onion instead. I think that was a big mistake. Next time I make these, I will follow the recipe as is, and possibly add some extra egg and maybe shredded cheese for moisture since it seemed a bit dry. All in all great though, and my kids loved it!

Bechamel Chicken Pasta

My husband, who is Egyptian, said this was as good if not better than any macarona béchamel he's eaten in Egypt! He was mad at me for something the day I made this and he said anything I had ever done to make him mad was forgiven because of this meal. LOL. It's so nummy and I can see myself playing around with the ingredients to make a completely different meal next time I make it!

French Onion Soup II

Good and quick if you have some onions to use up, but it doesn't have that French onion soup taste that I was looking for. Next time I want some French onion, I'll stick with my tried and true "fancy" recipe with the wine and all. :)

Chunky Banana Nut Chip Ice Cream

SO yummy, I had to get it out of my house and give it away because I couldn't stop eating it!! I didn't have mini choc chips, so it was just banana walnut, but SO delicious just the way it was!

Mom's Shepherd's Pie

Awesome! Just made a couple changes. I fried a little onion and celery with the ground beef, threw in a little garlic, and didn't have green beans so substituted a bag of frozen mixed veggies for the beans. Turned out great! Will definitely make again.

Lamb Stew with Green Beans

I have made a similar dish for my family many times with beef, but it's incredible with lamb! I didn't have celery, so I substituted a green pepper. Amazing! I didn't have mint either, and I omitted the dill and sugar. It turned out fantastic! My family ate it up! 5 stars!

Glazed Carrots

Absolutely delicious! My family ate this up like it was going out of style. And so easy! I made it as a side to go with Maple Salmon and garlic mashed potatoes. Will definitely make again! I cut out one tablespoon of butter, and it turned out just as good.

Maple Salmon

My family adored this dish. I followed the directions exactly as it states in the recipe, except I used low sodium soy sauce. Tip: Line your pan with foil for easy cleanup when done. I will be making this again. I didn't have a lot of time to fuss with dinner today, and this was just the thing. It was so easy, but tastes as if I slaved over the stove. :)

Old Fashioned Chicken and Dumplings

Like a few others' said, good base recipe. I tweaked it quite a bit. Added a bay leaf and some poultry seasoning for flavor, added more salt. Added some carrots and more celery. I added way more broth. Also, the dumpling mix is great, but I would suggest making the dumplings smaller than this recipe calls for. The middle of the dumplings turned out kind of dry and I think that could be avoided by making the dumplings smaller.

Oven Baked Garlic and Parmesan Fries

I don't know what I did wrong here, but they turned out mushy and greasy, and I followed the recipe pretty closely. The overall flavor was wonderful, but I think if I made these again, I'd use less oil and less cheese (or more potatoes), cut the potatoes into larger wedges and bake longer, and DEFINITELY use parchment paper when baking.

Simple Beef Stroganoff

Good easy weeknight recipe with a little tweaking. I added some chopped onion and fresh sliced mushrooms. Also about 1/4 cup of milk, as it just seemed very thick. Tossed the egg noodles with a little olive oil and parsley just before serving. The family loved it.

Slow Cooker Chicken Marrakesh

This was an absolutely amazing dish for the simple fact that my 7-year-old son INHALED it! It was absolutely delicious. I made it without the tumeric because I didn't have any on hand. I cooked the chicken, and then made it in my pressure cooker and cooked it on high for 6 minutes. Turned out perfectly. I served it with rice. It was a huge hit with my family. Will definitely make again!

Eggplant Lasagna

Excellent! My husband told me this is the best meal I've ever made. I have to say, though, that this is best eaten right away after cooking. This is definitely not a cook-ahead recipe. The leftovers left a lot to be desired.

Beef and Cabbage Stew

I made this recipe in my pressure cooker and it cut the cooking time down to about 35 minutes. It turned out perfectly. I browned the beef in a little oil for about 12 minutes, pressure cooked the meat, broth, onion, and spices for 15 minutes, added the veggies and pressure cooked for 7 minutes, added the tomato sauce and pressure cooked for 1 minute. Fabulous!
