Mexican Hot Carrots

I used red wine vinegar and otherwise followed the directions exactly. I am sorry, but the vinegar flavor was just WAY to strong to enjoy these. Could be my fault.

Quick and Almost-Professional Buttercream Icing

Be sure you use white vanilla if you want white frosting. The frosting was good. Nothing special. I used it on a boxed Devil's Food Cake and really the whole thing was pretty tasteless. It added good moisture to the cake and was not overly sweet.

Six Can Chicken Tortilla Soup

This recipe is good. I didn't drain the Rotel tomatoes so it was a little spicy. I also should have rinsed the black beans because I used a can of fat free cream of chicken like others suggested, but the liquid from the black beans made the soup a funky color. I will definitely try this one again.

Texas Caviar I

Delicious. I made this without the ground corriander. I used a can of petite diced tomatoes-- but then ended up adding 3 chopped plum tomatoes. Next time I will cut back a little on the salad dressing-- perhaps pouring out an ounce or two of the oil in the salad dressing. It gives off alot of liquid and with the salad dressing there's even more liquid. It's definitely better after it has set up-- but not more than 3 days. I ended up throwing a bit of it out on the third day. I am planning a party and will be using this recipie-- it really is delicious

Slow Cooker Thanksgiving Turkey

I used turkey breast cutlets instead of bone in turkey-- and I mixed pepper with garlic powder for the "garlic pepper." I used more of the mix than called for-- but I didn't measure. I thought the turkey came out really salty. But, scraping off some of the sauce left a decent piece of moist turkey breast. Served with some mashed potatoes with swiss cheese mixed in made for an unexciting, but decently edible meal.

Salsa Cheese Boule Dip

I made this today using On the Border salsa and hawaiian bread. It was really bad. I give it two stars though-- because it could be improved. It's mild flavor would lead well into adding a package of chopped crabmeat or shrimp. I would never put it back in the bread bowl. Waste of good bread, and it was better with tortilla chips. I'd also add either some packaged taco seasoning or some cumin-chili powder. I love Mexican food-- and Rotel dip. This recipie sounded great, but was really a disappointment.

Factory Workers Chicken

This recipie was really good. The chicken had good flavor and was really tender. And it had that little crispiness to the tops. I used boneless, skinless thighs-- and when they were done they kind of looked like little frogs. Next time I will line the pan with foil because it's going to be a mess to clean it up.

Grilled Chicken Adobo

This meal wasn't that good. I did however accidentally leave out the honey until after I strained out the food particles. But, grilling it was almost impossible because the chicken fell off the bone was too easily. I think it would have been better to take off the skin before cooking it. But, I won't try it again because I really didn't like the sauce. That's not this recipie though-- just in general. It's probably an acquired taste.

Cowboy Mashed Potatoes

I just made this recipie and found it to be really good! I didn't have cheddar-- so I added 5 slices of American cheese-- and that was too much. BUT, it was still delicious-- just a little runny. I'll make these again and recommend you try them too!

Thai-Style Tilapia

I made this last night-- It was my first attempt to make Thai styled anything-- That being said, I found the fish in this dish to be wonderful-- but the sauce was horrible. The flavors were way too strong. I guess if you like the spice, It be great but for me it was just too strong.
