Pumpkin Raisin Scones

These were definitely more like muffin-y cookies than scones. I would give them 4 stars if they weren't called scones.

Vegan Split Pea Soup I

Loved this! I threw everything in the crock pot, omitted oil, and added 2 extra cups of water and a chicken boullion cube. Cooked on high for 4 hours, and then low for 4 more hours. It's fantastic! I've made it once a week for the past 3 weeks, frozen some, and probably eaten a bowl at least once per day. On Weight Watchers, 1 cup is 4 points.

Spinach and Orzo Salad

Great recipe and easy to make. I halved it and I am glad I did--it makes a ton! Would be great to add bacon or grilled chicken to for a full meal salad.

Baked Halibut Steaks

I marinated the fish overnight in Italian dressing, as suggested by others...in the end the fish was still tasteless, underneath the veggie topping. Yuk.

Boilermaker Tailgate Chili

I made this for a potluck and got a couple recipe requests, and great reviews. I omitted the celery, bell peppers, chili peppers and bacon bits. I added grated carrots, because I just had them on hand. I browned the meats and threw it all into a Crock Pot for 6 hours. Easy!

Easy Slow Cooker Meatballs

I was worried because of some of the reviews, but I thought this turned out great for being so easy! I used the really low fat % ground beef, so there wasn't much grease. I must have had a really good jar of sauce (Safeway Marinara), because it turned out fantastic! I didn't have an onion, and I omitted the tomato puree--just jar sauce and a can of diced tomatoes, a little sugar, and some extra Italian seasoning and minced garlic for the sauce. Maybe it would only be 4 stars if it was a lot of work, but for being easy and tasting good, I gave it 5!

Pumpkin Cheesecake in a Gingersnap Crust

I mixed gingersnaps and pecan sandies for the crust, and also substituted pecans for the hazelnuts. There was not enough crust to press 2" up the sides like the recipe stated. I substituted pumpkin spice coffee creamer for the heavy cream, and also used 2 pkgs. of fat-free cream cheese with one full-fat cream cheese. I don't think anyone missed the fat. I only had to cook it about 1 hour, and the top got a little too brown for my taste, so I served it covered with whipped cream. I got great reviews from the family on Thanksgiving. I didn't think it was fantastic, though.

Spinach with a Twist

Sweet Potato Pecan Waffles

I used canned pumpkin, added cinnamon, used whole wheat flour instead of cake flour, egg substitute (3/4c) and used a drizzle of olive oil instead of butter. It needed more sugar, so I added some brown sugar. The waffles weren't crisp (kind of soggy), but they had great flavor once I added the br. sugar.

Banana Oat Bread Pudding

I used some suggestions given: I added cinnamon and vanilla extract and walnuts. Also, I used applesauce instead of butter, and soy milk instead of regular milk (to lower fat and cholesterol). I cut down the bananas to 2, and used the Splenda/brown sugar mixture to cut sugar calories. I added currants as well as Heath toffee chips to sweeten it up, because I was making it for a dessert. I served with vanilla bean ice cream and drizzled caramel sauce on it. It would not have been sweet enough for a dessert otherwise. I rated the recipe as a 4 by itself, but with all my changes/additions, it was a 5! I got rave reviews and everyone wanted more.

White Chili with Ground Turkey

I took some suggestions and cut down the broth to 2 cups, and used 2 cans pinto and one can kidney beans, instead of cannelini. Also substituted ground chicken, because I had it on hand. It turned out good, and can easily be changed for what you have on hand.

Hazelnut Chocolate Chip Scones

These were good, but basically tasted like a big chocolate chip cookie. I was looking for something a little different in a scone. But chocolate chip lovers will enjoy them.
