I am a baker at heart, but am trying to branch out into main dishes and appetizers. I am particularly interested in Italian dishes and fun drinks.
My favorite family cooking traditions
From the time I can first remember, I have loved making chocolate chip cookies with my mom. We always added extra chocolate chips and extra vanilla. Yummy!
My cooking triumphs
One of my favorite cooking moments was making a delicious pecan pie to bring to Thanksgiving dinner at my boyfriend's mother's house, and hearing everyone rave!
My cooking tragedies
Once while making turkey tacos I accidentally hit the handle of my skillet, sending raw turkey meat flying all over my kitchen and ended up ordering take out.

Slow Cooker Chicken Tetrazzini
I love this recipe! So yummy. I made the following changes to reduce the calories and increase nutritional value: Add 2/3 cup of frozen peas and 2/3 cup of frozen carrots Use reduced fat cream cheese With these changes it is 211 calories for 1/6 of the tetrazini made from this recipe (not including pasta). I found it to be a bit bland the first time that I made this, so I added extra garlic, garlic salt, onion powder and a sprinkle of chili powder. Much better!

Creamy Pesto Shrimp
I made this with 1/4 cup butter and half and half instead of heavy cream. As someone else recommended, take the butter/cream mixture off of the heat and stir in the Parmesan veryyy slowly. I also used a "heaping" 1/3 cup of pesto and added 3 cubes of frozen basil (from Trader Joe's). Next time I will be adding fresh garlic and some additional spices because there wasn't quite as much flavor as we usually like. In general though, this is a great recipe!

Braised Balsamic Chicken
Yum! I just made this and my picky boyfriend loved it. The breasts were not cooking, so I had to take it out halfway though and cut it into cubes. Next time I will just do this from the start. Also, I used fresh basil.
