I'm using this recipe for my 5th annual family chili competition. I did a lot of searching around and experimenting with different ingredients and this one looks pretty promising. I just finished my first trial batch and have to say I am not blown away. Although it does taste VERY good. I switched it up a little bit so its probably my fault. I used 2/3 of a serrano pepper and added some cajun spice to it.I used half yellow and then a white onion. This is a VERY good recipe but Im competing with people who are using exotic meats etc. After tasting it from simmering for awhile I am prepared to go to war with it. I would say that maybe 4 boullion cubes is too much because it seems a little salty. maybe 3 cubes or 2 1/2 or grade down from the salt requirement. i thought maybe since this is a tailgate chili that everyone would be drinking beer so the salt would be a good thing. there will be alot of drinking going on during this competition so maybe it works out. overall i would like to say thank you for this recipe and i apologize for mixing it up a bit but down south here we need some more spices. I think i will win 1st place if not place 2nd or 3rd out of 8 entries. this is a good recipe just go easy on the salt. merry christmas... time to eat some chili!! BTW I won 2nd first year 2nd second year 5th 3rd. no entry last year. Completely going in with something different this year. thanks.
