Baked Crab and Artichoke Dip

I have made this recipe for several group meetings and it has been loved! However, since I live in rural Costa Rica, I have had to substitute for some of the items! Had to use canned crab (drained), leave out the tarragon (not available here), and use local cheeses (mostly goat) since other cheeses are imported and cost $7+/- an ounce! I did add a few jalapeno peppers (finely chopped). I also made it with mushrooms instead of the crab (canned crab is $5 for a small tin) and it went over well! I highly recommend this recipe and know that it can be varied and still be great!

Nana's Southern Coleslaw

I was looking for a good coleslaw recipe that I could modify somewhat since I live in Costa Rica, in a small town in the middle of the rainforest, and some ingredients are very hard to find and/or hard to keep on hand. So here are my modifications (for 1/2 recipe): used 1 generous Tablespoon of yogurt instead of milk and buttermilk, added no sugar, used the juice of 1 small lemon and 1 tablespoon of apple cider vinegar, had to add a bit more mayo. Also added a bit of garlic and more (fresh ground) pepper than called for (I like it spicy). I divided the result into 2 portions. One I left "plain" and other I added fresh pineapple cut into bits and raisins (sort of "sometimes you feel like a nut, sometimes you don't" options). HAD to taste them before I refrigerated - YUM! I love recipes that can stand alone OR be modified! Only gave it a '4' since I had to substitute but mine were definitely a '5' in taste - both of them!

Best Ever Jalapeno Poppers

mine turned out VERY spicy - but really tasty (maybe the peppers here in Costa Rica are spicier since I used really fresh ones from the farmers market). you really do need to do the 3 coatings. And my peppers were a bit too crunchy - next time I will pre-cook them a bit to soften them. But, on the whole, a really good, albeit spicy, recipe!
