Chef John's Coq Au Vin
This recipes deserves every one of its 5 stars! Just made this tonight, exactly as written, and it was outstanding. Even my husband, who doesn't care for mushrooms, loved it. He just threw his mushrooms on my plate - I was a happy camper. My chicken was done after only 40 minutes in the oven, so I would recommend checking the internal temperature after the first 30 minutes.
