Creamy Cheesecake

The "extra creamy" taste described is just that it's a bit undercooked in this recipe. The edges were a "normal" cheesecake consistency, which I like better. That said, many people seem to like the gooier filling, and it is a delicious and simple recipe, similar to other "cheese pies" and simple cheesecakes. 4 stars for the cheese/egg/sugar ratios (I flavored with 1 tsp. vanilla and 2 tsp. lemon extract) and I would make a similar cheesecake again, but add 10-15 minutes to the cooking time.

Graham Cracker Crust I

I use less sugar but the butter/cracker crumb ratio is perfect on this. Some try to skimp on the butter and this is delicious. One bag of graham crackers (Honey Maid boxes come with 3 bags inside) is just the right amount.

E-Z Cream Biscuits

Delicious and so easy! Froze some as suggested in the recipe. The frozen dough still tasted great but this recipe is so quick it actually takes way longer to use the pre-made frozen dough than to whip up a fresh batch! I made drop biscuits both times and just patted into round shapes. They don't split that evenly that way but they are so fast and delicious.

Hawaiian Banana Nut Bread

I omitted the walnuts, pineapple, and cherries, and added chocolate chips to make a very easy, rich chocolate-coconut banana bread. Compared to my grandmas (wonderful) banana bread recipe, this uses more bananas (I used 4 overripe ones) and is quicker since you just mix it up (no creaming butter or beating eggwhites). My husband isn't a fan of normal banana bread but loved this, so I will make it again!

Bread Pudding I

This is a wonderful base recipe for bread pudding. I've made it a couple times and have some tips that might be helpful: First, you can make this in an 8x8 glass baking pan, it's just the right size. Secondly, to know if you have enough bread, the cubes should completely fill the dish, level with it on top (if it's a small specialty loaf you might need 12 slices). When you pour in the egg mixture the bread will absorb it and fill the dish perfectly. Also, I just mixed the spices into the eggs rather than tossing and sprinkling (I used pumpkin pie spice blend), and I used butter rather than margarine and wayyyy less salt; half a teaspoon would be quite salty to my taste. And lastly, I tried this once with raisins that I soaked in a couple tablespoons of rum for an hour, and once using about half a panettone instead of bread (and omitted the raisins), and both batches were awesome.

Vanilla Pecan Pie

Delicious flavor, BUT I had a problem with the caramel layer seeping under the cream cheese layer. So it was crust, caramel, then cheesecake and the nuts on top. It still looked pretty good, but not as pictured. I didn't anticipate the problem because I assumed the cheese layer would be heavier, and I did pour the goo on carefully, after partially baking the cheese filling as instructed. Next time I will try spreading the cream cheese to the edges of the crust more carefully to make sure there's no gap. Also, I didn't toast the pecans and there's no need to since you bake them 40 minutes!
