Asparagus, Chicken and Penne Pasta

I made this tonight for myself and pre-teen boys. I was concerned about it being dry so when I drained the pasta, I saved some of the water. I added it to the asparagus and chicken with just a little mozzarella cheese. It was so good. Everybody enjoyed it. I'll make again.

Baby Bok Choy with Garlic

I bought some bok choy...because, well, I like saying bok choy. I had no clue how to cook it. I found this recipe and I am now a huge fan. Next time, I'll cut back on some of the ingredients but this is really a good way to cook it. Hubby even complimented it and thought it was an excellent way to cook it. It's a keeper.

Taco Seasoning I

I didn't realize that I was out of taco seasoning until I was home from the store. Being lazy and experiencing low outside temperatures, I decided to give this a try. I didn't have oregano but everything else. added it to my Mexican soup and I was blown away. I will never use the other stuff again. the dish smelled earthy and yummy while cooking all day and tasted wonderful. I think I'll make a batch to have on hand at all times. Thank you!!

Charley's Slow Cooker Mexican Style Meat

This is so flippin' good! I used a 2 lb roast and adjusted according to our taste and preference. Next time, I will double the recipe. It was so good. We made tacos and I think I could've eaten about 10 of them. I took other's advice. I didn't cook the meat ahead of time (time saver) then about an hour before serving, I shredded it and placed it back in the juice. I added cumin and reduced the hot sauce as I was scared of the heat factor. Next time, I'll add more hot sauce. Love, love, love it. I can't wait to make again. yummo!!

Slow Cooker Chili II

This isn't your typical chili and I'm okay with that. I do love the extra veggies snuck in. It was something that my boys would eat and I felt good serving it. I think the seasonings were a guideline and I took it as so. We like more garlic and a lot more spice so we adjusted it to our liking. I think next time that I will saute the onions and celery prior to putting in the crock pot. That is the only thing that I would change.

Honey-Garlic Slow Cooker Chicken Thighs

This is definitely one my new favorites. I was making a list for the store and the only thing that I had to buy was the chicken. Everything else was in the pantry. The chicken was so moist that it was falling off the bone. I served it with zucchini and couscous. It was delicious. I was telling my co-workers about it and started drooling! So easy; will go in the regular weeknight rotation.

Hash Brown and Egg Casserole

Ham and Broccoli Quiche

I make this every year after Thanksgiving with the leftover Honey Baked ham. It is easy and yummy. This year, I was too lazy to go pick up the leftovers that I forgot at my mom's so I used bacon and cheddar instead. So delicious and easy that it was stupid. I think next time, I might add a little onion and some garlic powder to kick it up a notch, once I pick up the leftovers that is.

Sweet Potato Casserole II

By far, my favorite sweet potato casserole recipe. Instead of boiling, I baked the sweet potatoes as I had other things to do in the kitchen. This was a time-saver as I only had to split them open and scoop them out. They weren't too sweet. My husband actually liked them where he normally does not care for them.

Apple Cider Cranberry Sauce

Wanted to try something different this year over my usual oranges, cranberries and sugar. This is okay. I'm taking it to Thanksgiving tomorrow and my fear is that the spices will overpower the turkey. We will see. I let it simmer for an hour to thicken up. I like the consistency. I don't hate it but just not sure if I like it enough to keep around.

Japanese Zucchini and Onions

Bulgogi (Korean Barbecued Beef)

It was very good. Next time, I think I will double the meat and triple the marinade. My oldest went for seconds which is a rarity. Easy to cook up and I think will be easy for a midweek meal. I cooked it in the pan. I can only imagine how great it is over the grill. Thank you for the recipe!

Slow Cooker Machaca

I cannot keep my husband out of the crockpot-we might not have enough for dinner if he keeps going back to "sample". I drained off the liquid and kept about a cup. I added cumin, onion powder, garlic and chili pepper to the cup and mixed it back with the meat along with the enchilada sauce. Very delicious.

Baked Teriyaki Chicken

Maybe I didn't let it thicken enough but my sauce was on the bland side. It wasn't awful. Everyone ate it and one son went back for more. I'll keep the recipe and maybe cook it down a little bit more.

Fried Rice I

First this is sooo easy to make. I had it completed in no time. Served it with teriyaki chicken and it was a quick, decent meal. My boys ate every bit of it and one son went back for more. I thought it was just okay. I tasted it while still in the pan and thought it was very bland. I added some ground ginger and garlic powder before serving which sparked it up a little bit. Next time, I'll add carrots and peas. It lacked color too. I think it's worth keeping with some tweaking.

Ratatouille Bake

I was looking for a pasta recipe outside of the usual spaghetti, lasagna etc. for when my husband goes out of town (he's not a fan). I cannot tell you which part of this is my favorite-the eggplant, ravioli or cheese. The flavor is delicious. My youngest son told me that he didn't like it; he LOVED it. Very filling too. I will make this again. YUMMO!

Artichoke Chicken

I've been making this for years. Basically using my MIL's artichoke dip on top of chicken. I personally think the trick to keeping it from being so oily is to add just enough mayo to make the other ingredients "stick". I also add garlic to give it some "umpfh".

Slow Cooker Spicy Chicken

Made this before work adding frozen chicken breasts. My boys gobbled it up. I'll add more spice next time as this wasn't very spicy. Excellent flavor and the chicken was not dry at all. Served them in tortillas with guacamole with lime-cilantro cauliflower and black beans. Very easy, satisfying week day meal.

Awesome Slow Cooker Pot Roast

Fixed this the other day. Threw in small red potatoes, celery, carrots and an onion. I did sear the meat prior to adding it to the crockpot but not entirely sure if it was needed. Husband said that it tasted like his mother's. So easy and delicious. I'll be making it again.

Brazilian Grilled Pineapple

I've grilled these twice now. First time, I added 2 teaspoons of vanilla with the cinnamon and brown sugar then added water to make thinner. Second time, I cut back a little on the cinnamon as I'm not a huge fan and didn't add water. Water wasn't needed at all. It was so good both times. We put a scoop of vanilla ice cream on top. Yummo! The pineapple is soooo sweet and juicy. My favorite dessert.
