Brazilian Grilled Pineapple

I've grilled these twice now. First time, I added 2 teaspoons of vanilla with the cinnamon and brown sugar then added water to make thinner. Second time, I cut back a little on the cinnamon as I'm not a huge fan and didn't add water. Water wasn't needed at all. It was so good both times. We put a scoop of vanilla ice cream on top. Yummo! The pineapple is soooo sweet and juicy. My favorite dessert.

Delicious Ham and Potato Soup

I only made 2 changes: I didn't add as much flour and I used 2 cubes of chicken broth. It was delicious. My youngest son had 2 helpings. It was bland-ish but I didn't want a lot of spice. I couldn't believe that I had this on the table by 6:30. It tasted like it had been cooking all day. Will make again with a few changes (less flour as it was too thick for me) and when the ailing dude is feeling better maybe some spicy sausage and spinach (?). Thanks for the recipe. Just proves that good food can be put on the table just as fast as going to grab fast food.

Grandma B's Bean Soup

I made this last night. Actually started it the night before at bedtime. My family ate every bit that was served including the kids. That is a definite plus. However, if I make this again it will be with a few changes. I used a small smoked ham equaling the amount requested which I think next time, I will add more. I also added two chicken bouillon cubes and 2 small bay leaves only because my first thought after reading the ingredients was "where are the spices?" I set it all night and let it cook through the day on low. When I came home, I mashed some of the beans and potatoes to make it more creamy. The result was better but everyone agreed that more ham would have enhanced the flavor. Not sure if I'll make again....maybe.

Tomozzakala Salad

I bet this is so good with fresh tomatoes. I wanted something different for dinner tonight. I used hot house tomatoes and it was still very good. I had to put it away because I kept picking at it. Not sure if it will keep for tomorrow's lunch but I'm willing to try. Simple but divine.

Oatmeal Banana Nut Bread

So addicting. Took the advice of another reviewer and added nutmeg, cinnamon and cloves. Used combined brown and regular sugar of about 1/2-3/4 full and more bananas. Oatmeal, brown sugar and cinnamon for the topping. Fabulous. We couldn't stop eating this. Ate it with honey butter but just as good without it, really. I may buy bananas and let them go bad for this recipe alone.

Chicken Pesto Pizza

I had multiple things going on in the kitchen when trying to put this together so really didn't pay attention to the directions beforehand. So when I actually read them, I was thinking "that's it?". One kid does not like artichokes so I substituted his slices with black olives. He loved it. It was very good and I'll make it again. Supereasy and delicious.

Greek Pizza

Made this tonight for my family of 4. I thought my boys would turn their noses up to it. Surprisingly, it was a huge hit with everyone. One piece left that my husband doesn't think will reheat well but it was so good that I am willing to try. I'll admit that it wasn't pretty like the picture but it was really, really good.

Kalua Pig in a Slow Cooker

I was really concerned about the "too salty" comments especially since I rarely use salt. I used a little less salt and just a little more liquid smoke. I also had a tenderloin as I couldn't find a butt or shoulder. Cooked it the day before and placed on warm the day of serving. Everyone loved it. Change from our usual Carolina style bbq. Made a lot so might use it for burritos or enchiladas later this week. Yummo. For those complaining about how dry the meat was, not sure why. I turned frequently and had to stop after a few hours as the meat started to break apart in the liquid. It remained juicy and tender through all that cooking. Thank you for sharing.

Jayme's Cole Slaw

I needed to make cole slaw with ingredients that I had at home so I went with this one. I did cut down on the sugar and vinegar then used reduced fat mayo. Also, threw in some shaved carrots. Still a little "vinegary" tasting but really liked it. Next time, will add just a little less vinegar and think it will be perfect. I'll keep at it. Served it over Kalua pork.

Slow Cooker Turkey Breast

I couldn't find bone-in turkey breast so used two boneless turkey breasts. Added just a pat of butter to the bottom but not sure if it was needed. Worried about it being dry but came home to find that my worry was completely stupid. Made a little gravy with the juice and served with some stove top stuffing and green beans. It was so good and hubby and I had leftovers for the next day too. Yummo! Its a keeper!!!!

Slow Cooker Autumn Delight

I work one night a week and usually will put to something in the crock pot for the boys to have for dinner. When I put it in the crock pot, I did not have a good feeling about it. Surprisingly, my husband texted me to tell me it was delicious. Enough left over for 2 more good size portioned plates. Took some to work the next day and the meat was still tender with a good flavor. Only thing that I would change is maybe cut down on one can of soup. Two is plenty, I think. I'll make this again. It was yummy.

Eggplant with Almonds

First, I cheated. I didn't seed the tomatoes or remove the skin from the almonds. It was still very good and my boys actually liked it. I gave this 4 stars only because I had to add more spice. As written, it seemed a little blah. This will go in the rotation. Thank you!!

Ultimate Twice Baked Potatoes

Wow these were good. I followed the recipe as is. My son who is a little iffy with potatoes loved these. I thought they came out perfect. The flavors blended beautifully and it was so dang easy to make. Definitely a hit and will be made again.

Yellow Squash Casserole

I made these for Mother's Day dinner for 7 people. Well liked by most of the adults-I didn't care for it. 2 kids did not like it and will eat grilled/sautéed squash. I cut the squash into chunks and sautéed it for a few minutes with heaping spoonful of garlic then followed recipe. It was still bland for me; mushy on the bottom and perfect on top. I don't think that I will make this again unless requested. 3 stars because 4/7 liked it.

Bread Pudding in the Slow Cooker

Mine is still cooking but I snuck a taste. It is out of this world good. Reminds me a lot of Raglan Road's (Disney World). I cannot wait for it to be done. I used Pepperidge Farm's hearty cut white and toasted it as suggested. I added cinnamon and just a little more vanilla. I only had skim milk so I used 1 cup skim and one cup half and half. Sooooo easy. Thank you so much for the recipe.

Spinach Stuffed Chicken Breasts

The only problem with this recipe is I assumed that the kiddos wouldn't like it so I only made 3 breasts (one for them to split). Everyone loved it. I made it according to the recipe and I wouldn't change a thing. 10 year old thanked me for making such a great meal. Easy to throw together and will go into the rotation. Thank you!!

Oia Greek Salad

I left out the capers. I knew it wouldn't go over well. Otherwise, followed it as called for. I do not like red onions but I didn't notice them. This was outstanding. Everyone but the 8 year old liked it with the adults going for seconds. Leftovers will be calling my name tonight but will try really, really hard to leave it for lunch tomorrow. I don't think I stand a chance though.

Greek Green Beans

Tasted like this needed something. It was just okay. Everyone finished it but felt like it was just meh. I've made these again with a few changes and upped the stars. First, I completely cheated. I didn't have fresh green beans so used a can of French cut green beans and used red onions. I also sprinkled in a little Mediterranean Basil (dried). My husband's eyes rolled in the back of his head with the first bite. This will now go in the rotation more frequently. I think the BIG difference were the onions not the canned beans. lol
