Sweet Potato Casserole II

By far, my favorite sweet potato casserole recipe. Instead of boiling, I baked the sweet potatoes as I had other things to do in the kitchen. This was a time-saver as I only had to split them open and scoop them out. They weren't too sweet. My husband actually liked them where he normally does not care for them.

Apple Cider Cranberry Sauce

Wanted to try something different this year over my usual oranges, cranberries and sugar. This is okay. I'm taking it to Thanksgiving tomorrow and my fear is that the spices will overpower the turkey. We will see. I let it simmer for an hour to thicken up. I like the consistency. I don't hate it but just not sure if I like it enough to keep around.

Japanese Zucchini and Onions

Served this with Bulgogi. My husband's only suggestion is to double the recipe next time. Literally, nothing left in the pan. It was that good.

Bulgogi (Korean Barbecued Beef)

It was very good. Next time, I think I will double the meat and triple the marinade. My oldest went for seconds which is a rarity. Easy to cook up and I think will be easy for a midweek meal. I cooked it in the pan. I can only imagine how great it is over the grill. Thank you for the recipe!

Slow Cooker Machaca

I cannot keep my husband out of the crockpot-we might not have enough for dinner if he keeps going back to "sample". I drained off the liquid and kept about a cup. I added cumin, onion powder, garlic and chili pepper to the cup and mixed it back with the meat along with the enchilada sauce. Very delicious.

Baked Teriyaki Chicken

Maybe I didn't let it thicken enough but my sauce was on the bland side. It wasn't awful. Everyone ate it and one son went back for more. I'll keep the recipe and maybe cook it down a little bit more.

Fried Rice I

First this is sooo easy to make. I had it completed in no time. Served it with teriyaki chicken and it was a quick, decent meal. My boys ate every bit of it and one son went back for more. I thought it was just okay. I tasted it while still in the pan and thought it was very bland. I added some ground ginger and garlic powder before serving which sparked it up a little bit. Next time, I'll add carrots and peas. It lacked color too. I think it's worth keeping with some tweaking.

Ratatouille Bake

I was looking for a pasta recipe outside of the usual spaghetti, lasagna etc. for when my husband goes out of town (he's not a fan). I cannot tell you which part of this is my favorite-the eggplant, ravioli or cheese. The flavor is delicious. My youngest son told me that he didn't like it; he LOVED it. Very filling too. I will make this again. YUMMO!

Artichoke Chicken

I've been making this for years. Basically using my MIL's artichoke dip on top of chicken. I personally think the trick to keeping it from being so oily is to add just enough mayo to make the other ingredients "stick". I also add garlic to give it some "umpfh".

Slow Cooker Spicy Chicken

Made this before work adding frozen chicken breasts. My boys gobbled it up. I'll add more spice next time as this wasn't very spicy. Excellent flavor and the chicken was not dry at all. Served them in tortillas with guacamole with lime-cilantro cauliflower and black beans. Very easy, satisfying week day meal.

Awesome Slow Cooker Pot Roast

Fixed this the other day. Threw in small red potatoes, celery, carrots and an onion. I did sear the meat prior to adding it to the crockpot but not entirely sure if it was needed. Husband said that it tasted like his mother's. So easy and delicious. I'll be making it again.

Brazilian Grilled Pineapple

I've grilled these twice now. First time, I added 2 teaspoons of vanilla with the cinnamon and brown sugar then added water to make thinner. Second time, I cut back a little on the cinnamon as I'm not a huge fan and didn't add water. Water wasn't needed at all. It was so good both times. We put a scoop of vanilla ice cream on top. Yummo! The pineapple is soooo sweet and juicy. My favorite dessert.

Delicious Ham and Potato Soup

I only made 2 changes: I didn't add as much flour and I used 2 cubes of chicken broth. It was delicious. My youngest son had 2 helpings. It was bland-ish but I didn't want a lot of spice. I couldn't believe that I had this on the table by 6:30. It tasted like it had been cooking all day. Will make again with a few changes (less flour as it was too thick for me) and when the ailing dude is feeling better maybe some spicy sausage and spinach (?). Thanks for the recipe. Just proves that good food can be put on the table just as fast as going to grab fast food.

Grandma B's Bean Soup

I made this last night. Actually started it the night before at bedtime. My family ate every bit that was served including the kids. That is a definite plus. However, if I make this again it will be with a few changes. I used a small smoked ham equaling the amount requested which I think next time, I will add more. I also added two chicken bouillon cubes and 2 small bay leaves only because my first thought after reading the ingredients was "where are the spices?" I set it all night and let it cook through the day on low. When I came home, I mashed some of the beans and potatoes to make it more creamy. The result was better but everyone agreed that more ham would have enhanced the flavor. Not sure if I'll make again....maybe.

Tomozzakala Salad

I bet this is so good with fresh tomatoes. I wanted something different for dinner tonight. I used hot house tomatoes and it was still very good. I had to put it away because I kept picking at it. Not sure if it will keep for tomorrow's lunch but I'm willing to try. Simple but divine.

Oatmeal Banana Nut Bread

So addicting. Took the advice of another reviewer and added nutmeg, cinnamon and cloves. Used combined brown and regular sugar of about 1/2-3/4 full and more bananas. Oatmeal, brown sugar and cinnamon for the topping. Fabulous. We couldn't stop eating this. Ate it with honey butter but just as good without it, really. I may buy bananas and let them go bad for this recipe alone.

Chicken Pesto Pizza

I had multiple things going on in the kitchen when trying to put this together so really didn't pay attention to the directions beforehand. So when I actually read them, I was thinking "that's it?". One kid does not like artichokes so I substituted his slices with black olives. He loved it. It was very good and I'll make it again. Supereasy and delicious.

Greek Pizza

Made this tonight for my family of 4. I thought my boys would turn their noses up to it. Surprisingly, it was a huge hit with everyone. One piece left that my husband doesn't think will reheat well but it was so good that I am willing to try. I'll admit that it wasn't pretty like the picture but it was really, really good.

Kalua Pig in a Slow Cooker

I was really concerned about the "too salty" comments especially since I rarely use salt. I used a little less salt and just a little more liquid smoke. I also had a tenderloin as I couldn't find a butt or shoulder. Cooked it the day before and placed on warm the day of serving. Everyone loved it. Change from our usual Carolina style bbq. Made a lot so might use it for burritos or enchiladas later this week. Yummo. For those complaining about how dry the meat was, not sure why. I turned frequently and had to stop after a few hours as the meat started to break apart in the liquid. It remained juicy and tender through all that cooking. Thank you for sharing.

Jayme's Coleslaw

I needed to make cole slaw with ingredients that I had at home so I went with this one. I did cut down on the sugar and vinegar then used reduced fat mayo. Also, threw in some shaved carrots. Still a little "vinegary" tasting but really liked it. Next time, will add just a little less vinegar and think it will be perfect. I'll keep at it. Served it over Kalua pork.
