Lentil Soup

This is my second attempt at a lentil soup recipe that had a high rating. Maybe I'm just not that into it, but this soup tasted like someone just put vegetables in water. It smelled great, but had no flavor. I tried extra vinegar as suggested, but it didn't help enough to give this a good rating.

Italian Wedding Cookies III

I have been making a similar version of this cookie with walnuts. I prefer this recipe with almonds for three reasons: almonds are cheaper, they crush more easily than walnuts and they give a nicer flavor than walnuts. Forget the ungreased cookie sheet: line the cookie sheet with parchment paper and these cookies will turn out perfectly with no burning and very little browning on the bottom. One of the nice things about the parchment paper trick is it allows you to make large cookies: the center has time to cook, and since the bottoms don't burn, they turn out great. Cookies like these pair well with a cuppa tea! (translation: cup of tea)

Best Brownies

These are the perfect brownies! I disagree with the review that called them cake-like. If you eat them right away, they can be cake-like, like any brownie. If you let them sit overnight, they are dense and fudge-y the next day. Don't worry about beating in ingredients, I hand-mixed them with a wooden spoon and everything came out fine. These don't make very many, it says 16 brownies in an 8x8 pan, but I like a big brownie, so more like 8-10 for me! They aren't very thick either, so double the recipe if you're planning desert for the family for a few nights.

Chef John's Tomato Sauce

A nice chunky tomato sauce. I think the 1/4 cup of oil is too much oil though. I couldn't get it to boil down to dry. Next time I will try 1/8 cup olive oil.

'Chinese Buffet' Green Beans

These green beans taste almost exactly like the Chinese buffet, only a little sweeter. I think 1 tablespoon is a bit much for the sugar. Next time, I will try a teaspoon instead. I also used the low-sodium soy sauce, and cooked the green beans first, putting in the garlic later.

Best Chocolate Chip Cookies

Finally, chocolate chip cookies that I can make huge, but won't burn the edges! These cook evenly. I used parchment paper on the bottom of the cookie pan, which keeps the bottoms of everything I cook from burning.

Iced Tea II

Wow, fantastic! I used 4 Twinings Pekoe Orange tea bags since I like a strong tea. I followed the suggestions to use less lemon juice, so I used slightly less than half a cup. Next time, I will use less sugar. It's a little sweet for my taste. I would like to taste the tea more. The orange tea with the lemon juice gave this tea such a wonderful citrus taste. It was great. It overflowed my 1 liter pitcher, so have a large pitcher.

Vegan Chocolate Cake

This cake is perfect: you would never know it's vegan. I made it with KADart05's suggested vegan frosting and it was awesome. I later baked this batter as cupcakes, which only took about 20 minutes.

Dairy Free Chocolate Pudding

This vegan recipe tastes just like dairy-pudding. It is creamy and chocolate-y. I did not alter anything. Serves about 4 if you imagine a serving being like the pudding cups at the store.

Slow Cooker Lemon Pepper Chicken

This was excellent. The chicken turned out tender and moist. The lemon pepper flavor was lacking (compared to the lemon pepper chicken I get at my local grocery store) but who knows what kind of fake chemicals they are using, so I prefer to make my own. I put bell peppers, onion, peppers and carrots in the cooker underneath the chicken to make a complete meal.

Spanish Rice II

This will be a staple food when I make Mexican/Southwestern. I didn't have chili powder, so I used 3/4 a teaspoon of cumin instead. I felt the can of tomatoes was too much, (almost equal amounts of tomatoes and rice) so next time I will try a small can of tomato sauce.

Mom's Buttermilk Pancakes

These are pancake perfection! I have been looking for a recipe for made-from-scratch pancakes, and now my Bisquick days are over. I took the advice of the reviewer who said to reduce the salt in the recipe, so I used 1/2 a teaspoon of salt instead of a whole teaspoon. I was able to make 8 medium-width, thick pancakes from this. They had a buttery flavor, and a soft and fluffy texture. They didn't absorb too much syrup, either. I was also able to eat one plain, without butter on top, since there is such a butter-y taste within the pancakes. This was our Christmas morning breakfast today, and it was perfect! Cinnken, thanks for sharing.
