About this Cook
I've been retired for about a year and LOVE retirement so far! I have three children: two boys and a girl, all grown. Five grands, all grandsons, ages almost eighteen to just turned nine.
My favorite things to cook
I cook for one or two most of the time and like to prepare multiple servings and either eat 'em up over a couple of days, or use a foodsaver to freeze the leftovers. We try to watch the sodium and cholesterol so we eat a lot of vegetables and very few pre-packaged foods. As a general rule, we try to avoid purchasing anything with ingredients we can't pronounce or very l-o-n-g ingredient lists.

Israeli Tomato and Cucumber Salad
Good salad. I'm not familiar with Israeli salad, but a ratio of one English cucumber to one Roma tomato would, I think, be a cucumber salad =) ... I scaled the recipe to two servings and used nearly equal amounts of English cuke and halved grape tomatoes (all I had). Nice light summertime salad.

Asparagus Cashew Rice Pilaf
This was just okay for me. Personal preference...because the pilaf and asparagus are prepared separately and stirred together at the end, I would rather have my usual brown/wild rice mix with asparagus on the side. I followed the recipe except to follow the liquid/rice ratio on the back of the bag of rice, decrease butter to 2T, increase onion to 1/2 cup, and increase the asparagus to almost one pound (pre-trimming). For meal-planning purposes, I would consider this dish a starch and a vegetable. As written, to me, it's five servings...nowhere near eight. I appreciate the recipe and glad I tried it, but won't make again just personal preference.

Lemon Basil Grilled Chicken
Excellent. I used all of the ingredients in the marinade, but didn't blend them, and I cooked the chicken on the stovetop.
