About this Cook
I've been retired for about a year and LOVE retirement so far! I have three children: two boys and a girl, all grown. Five grands, all grandsons, ages almost eighteen to just turned nine.
My favorite things to cook
I cook for one or two most of the time and like to prepare multiple servings and either eat 'em up over a couple of days, or use a foodsaver to freeze the leftovers. We try to watch the sodium and cholesterol so we eat a lot of vegetables and very few pre-packaged foods. As a general rule, we try to avoid purchasing anything with ingredients we can't pronounce or very l-o-n-g ingredient lists.

Jalapeno Bacon Cheddar Deviled Eggs
Very good. Next time I will leave out the mustard, or use much less, or sub a bit of vinegar. Just too many flavors competing, for me. I wanted to taste more of the cheese and bacon but felt that the mustard competed and didn't really add to the overall flavors.

Gurkensalat (German Cucumber Salad)
I used baby cucumbers and green onions. This had a weird texture to me. I made this early in the day and at serving time, drained most of the liquid out before stirring.

Andy's Spicy Green Chile Pork
Made with loin chops (thawed and needed to use), Herdez salsa verde, and a poblano pepper. My final dish was very good but not five star most likely because I didn't use the right cut of pork...and over-cooked...so I am rating five star and do plan to use the recipe again and follow the directions!!
