Slow-Cooked White Chili
This quickly became a staple in my house. What a great slow cooker recipe! I didn't alter the recipe much (added yellow corn and zucchini for more veggies). I used the same spices as listed, just a lot more of them. I probably use on the order of 3 tablespoons of cumin and a few teaspoons of oregano... I am not shy of spices/flavor and this came out delicious! I also only browned the chicken before adding it to the cooker (salt a peppered the chicken before browning and pour the drippings in the pot along with the cx for flavor). I serve in a bowl, sprinkle fresh cilantro on top, squeeze on some lime, and add a dollop of sour cream. Yum!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta
Soooo easy and delicious! I make this using chicken breasts and any type of tomatoes I have available. It still tastes great with canned tomatoes or roma tomatoes, though maybe it doesn't look restaurant worthy.

Kielbasa with Brussels Sprouts in Mustard Cream Sauce
I would not have thought to put these ingredients together, but this was super good. I've never eaten so many brussel sprouts in one sitting. The only thing I changed in this recipe is that I just sauteed the shallot and garlic when starting the sauce (I'm in a vacation home and don't have an oven), but it was still fantastic so I think I will still do that next time just because it's easier.
