Apple Crisp I

So delicious! I only ended up using about 5 small-medium sized Royal Gala apples since that was all that I had to use up. It all fit nicely in a 9x9 square baking pan (it was of medium thickness-- not too thick). I left the peels on the apples, as suggested by another reviewer. The only other changes I would make next time are to use brown sugar instead of white for the topping b/c I think it would be even more attractive. I would also not hesitate to mix the flour mixture into the apples, rather than just spread it on the very top. My husband helped me to make the flour mixture & had accidentally mixed some of it into the apples before he re-read the directions. We served the apple crisp with Blue Bunny's cinnamon ice cream (a limited flavor for the fall/winter) to accent the spice in the crisp. The combination was marvelous & was not too sweet at all! Leftovers tasted even better the next day after being warmed in the microwave. Thanks so much for a great recipe!

Easy Key Lime Pie I

This was so unbelievably easy to make & produced such a delicious key lime pie! I first made it in August for my mother-in-law's visit & wasn't sure how the recipe was going to turn out. But it came out wonderfully & my mother-in-law could not stop raving about it! I had to print her a copy of this recipe before she left for the airport, & I have also emailed it to my sister-in-law upon her mom's request that she try this recipe. It has the perfect amount of richness & tartness for us (a small sliver goes a long way). The whipped cream topping was a beautiful touch! I used a Keebler reduced fat graham cracker crust & altered the recipe according to another reviewer's suggestions. I used 4 egg yolks, 2 (14 oz) cans of sweetened condensed milk, & 1 cup of bottled key lime juice. i had to bake for 20-25 minutes instead of just 15 minutes. We found out that it also tastes best when refrigerated for at least several hours. Hope you enjoy this pie as much as my family & I did!

Dark Chocolate Cake I

This was simple to make & turned out so delicious & moist! For once, I actually followed the recipe exactly as written. I had baked it & frosted it with the Chocolate Cheese Frosting (also found on this site, submitted by Carol) the night before my husband's birthday dinner party. Then I had placed the cake on a glass cake holder w/ the glass dome cover on my kitchen counter overnight. I was worried that the frosting would go bad overnight b/c it wasn't refrigerated. However, our guests, my husband, & I were pleasantly surprised by how beautiful, delicious, & moist the cake was! They couldn't stop raving over it! I will definitely make this cake again!

Chocolate Cheese Frosting

This was the perfect frosting for the Dark Chocolate Cake, another recipe on this site by Carol. I used 1/3 reduced fat neufchatel cheese & added some extra cocoa powder for a deeper flavor. The only ingredient I omitted was the cinnamon. There was exactly enough frosting made for the 3-layer cake!

Luscious Spinach Artichoke Dip

Everyone at my husband's birthday dinner party enjoyed this! I served it with chunks of King's Hawaiian bread. You can also hollow out the bread & fill with dip, served with torn pieces of the bread. Delicious!

Key West Chicken

My husband & I loved the flavors of this dish! The ingredients really blended well together, adding some sweetness to the dish. I marinated the chicken overnight & then placed them in a tin foil-lined pan (with the marinade, and baked in a 350 degree preheated oven for 25 minutes. I served it with steamed white rice, drizzled with the cooked sauce. Next time I will definitely try them grilled!

Adobo Chicken with Ginger

My husband & I both enjoyed this chicken dish very much! The ginger flavor is very aromatic. I only used about a 1/4 cup of the white vinegar & substituted black pepper instead of peppercorns. The sauce is wonderful with steamed white rice. It reminds me of a Chinese chicken dish that my parents make at home!

Tomato and Garlic Pasta

This was so delicious! Since I didn't have any tomato paste on hand, I used a lot of Prego spaghetti sauce instead. The garlic was perfect... it made the pasta taste better than some dishes I've had at restaurants!

Garlic Cheese Biscuits

They tasted quite delicious! However, if you like them a little cheesier, you may want to add more cheese (maybe 2/3 cup instead of only 1/2 cup). I also sprinkled some garlic powder into the dough before baking.

Mocha Mint Cheesecake Brownies

These came out really yummy & moist! I used fat-free cream cheese, swiss mocha instant coffee powder (because I couldn't find the mocha mint in the store), & reduced the amount of margarine called for in the original recipe.

Cowboy Oatmeal Cookies

Everyone loved these! Next time I think I'll use less oil (maybe about 1/4 cup instead of 1/2 cup). I also added some shredded coconut and substituted chocolate chips for the butterscotch chips.
