Sorta Salisbury Steak

I made this today and my family loved it. Like other users, I seasoned the meat before dredging in flour. I also added mushrooms. I like the fact that after browining,the dish pretty much cooks itself. I popped it in the oven and then went shopping. When I came home, it was ready and delicious.

Eggplant Parmesan II

This was pretty tasty but it did require some tweaking. I found 2 eggplants to be more than enough for my family of four. I added basil and Italian seasoning to the tomato sauce and I found that the eggplant needed to cook for about 10 minutes on each side. I used park skim mozzarella slices because that's what I had on hand and I like the way they melt (the cheese gets nice and done like I like it). I will make it again.

Homemade Chicken Fettuccine

I only made a few changes to the recipe. I used a little salt on the chicken. I also used a tbsp of corn starch to help thicken the sauce. Like other users I used fresh garlic instead of powder. I used penne pasta since my family prefers it to fettuccine. The taste of the dish was superb but it did lack a little in presentation. I added a dash of paprika to the prepared dish for color. Next time I may add some broccoli and red pepper.

Linda's Lasagna

This is an awesome lasagna. I like how the dish is assembled and I also prefer the taste of cottage cheese to ricotta. I found this recipe on this site a few years ago and it is the only lasagna recipe I've used since.

Healing Cabbage Soup

This soup is true to it's name. I cooked it the first time last winter when I had a cold. I felt better almost instantly. I've been making it regularly ever since. I make it whenever someone is sick and I make it when we want to enjoy a nice, delicious soup. The only change I make is that I use a whole head of cabbage. I never know what to do with the rest of the head and I don't like to waste food.

Roasted Cajun Potatoes

Today is Labor Day and I wanted to serve something other than the traditional fare of hotdogs, hamburgers and potato salad. I grilled some steaks and served these yummy potatoes and boy were they a hit! I followed the recipe exactly as stated except I substituted onions for the shallots because my grocer didn’t have shallots in stock. The cooking time was too long as these were done in 25 minutes but otherwise the recipe is perfect as stated. They are very spicy which is great for my family but would also taste good with half the spice for those who don’t like hot food. Will definitely be adding these to my repertoire.

Frank's Famous Spaghetti Sauce

This was very good, pretty similar to how I make my spaghetti sauce. Of course I added seasoning to taste but otherwise I followed the recipe exactly and it turned out very tasty. My family loves spaghetti and I use several different sauces but I will surely use this one often.

Cajun Chicken Pasta

Awesome recipe. Like other reviewers, I used fat free half and half to lower the calorie content. I used a little corn starch to thicken and it turned out delicious. I agree with those who said this is restaurant quality. It is very simple to make and would be great to serve company. I used red peppers like the recipe called for because they were on sale. Usually they are too expensive but I must say that the red color added to the presentation. Next time I may dice a tomato and serve on top for presentation if red pepper is not available. Thanks for another addition to my recipe collection. This is a keeper.

Tasty Collard Greens

Delicious! I used two bouillon cubes and 5 cups of water and omitted the salt. I think one cube will be enough because the sodium content in two cubes is still way too high. I also decreased the cooking time to 25 minutes because I like the greens to retain their dark color and I don’t like the texture to be too mushy. Very easy and tasty recipe. Will definitely make again.

I was browsing through today’s photos and I happened upon this recipe. I had everything except for the sesame seeds so I tried it and I’m so glad I did. We enjoyed the taste and it went well with our grilled salmon.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

My husband always cringes when I pull out my crock-pot because for some reason most things I cook in it taste a little off. Not so with this dish, it was superb! I soaked my bean overnight and I followed the suggestion of other reviewers and used less water. I added a bay leaf and I also followed Ernid’s suggestion of ham bouillon in lieu of the ham hock. My kids loved it too. Thanks Melissa for a great recipe.

Slow Cooker Chicken Taco Soup

Excellent recipe. I used two cans of chili beans and omitted the corn. Also used broth instead of beer as suggested by other reviewers. My husband and kids loved the taste and I loved having dinner ready when I got home from work.
