Maryland Crab Cakes II

These are very good and very easy to make. Like others I used Old Bay instead of hot sauce. Just enough wet ingredients to hold together but not too much to overpower the taste of the crab. Will definitely be making again.

Super-Delicious Zuppa Toscana

This is absolutely delicious. Like other reviewers I used kale instead of spinach and I omitted the bacon. I also used fat free half and half to save a few calories. Otherwise I followed the recipe exactly and we loved it. I was planning to serve it along with our meal but I got lazy and it was the meal. That turned out just fine because this soup is very satisfying. Can’t wait to make it again.

Chicken Enchiladas

This was very good. I only made two changes. I used whole wheat tortillas and I used cheddar cheese because that's what we had on hand. I used some left over chicken from the Delicious Baked Chicken recipe on this site. My 10 year old daughter enjoyed helping me make this and it was so easy to prepare, she can probably make it herself next time.

This was very good and easy to prepare. The Worcestershire sauce gave it a nice taste. It came out very moist and tender. My family loved it too.

Slow Cooker Chicken Taco Soup

Excellent recipe. I used two cans of chili beans and omitted the corn. Also used broth instead of beer as suggested by other reviewers. My husband and kids loved the taste and I loved having dinner ready when I got home from work.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

My husband always cringes when I pull out my crock-pot because for some reason most things I cook in it taste a little off. Not so with this dish, it was superb! I soaked my bean overnight and I followed the suggestion of other reviewers and used less water. I added a bay leaf and I also followed Ernid’s suggestion of ham bouillon in lieu of the ham hock. My kids loved it too. Thanks Melissa for a great recipe.

I was browsing through today’s photos and I happened upon this recipe. I had everything except for the sesame seeds so I tried it and I’m so glad I did. We enjoyed the taste and it went well with our grilled salmon.

Tasty Collard Greens

Delicious! I used two bouillon cubes and 5 cups of water and omitted the salt. I think one cube will be enough because the sodium content in two cubes is still way too high. I also decreased the cooking time to 25 minutes because I like the greens to retain their dark color and I don’t like the texture to be too mushy. Very easy and tasty recipe. Will definitely make again.

Awesome recipe. Like other reviewers, I used fat free half and half to lower the calorie content. I used a little corn starch to thicken and it turned out delicious. I agree with those who said this is restaurant quality. It is very simple to make and would be great to serve company. I used red peppers like the recipe called for because they were on sale. Usually they are too expensive but I must say that the red color added to the presentation. Next time I may dice a tomato and serve on top for presentation if red pepper is not available. Thanks for another addition to my recipe collection. This is a keeper.
