Ranch Burgers

These burgers were really good. I was a little skeptical about using the cracker crumbs as I have never used any fillers when making hamburgers. I used them and I’m glad I did. I followed the recipe exactly but I didn’t measure anything. I had a 3.2 ounce bag of ranch dressing mix so I wasn’t sure how to measure 1 ounce but think I got too much. They were well seasoned and juicy.

Weekday Pot Roast and Vegetables

This was very good and very easy. Like others I was leery about the canned gravy but it was good. The carrots retained their color and they were not mushy. I didn’t care for the flavor or the texture of the potatoes.

Ham Fried Rice

This is a good basic recipe for fried rice. I substituted beef from a left over pot roast but otherwise followed the recipe exactly. My family enjoyed it and it was a quick and economical weeknight meal.

Pumpkin Casserole

Yum! I served this as a side dish with out Easter meal. It definitely tastes like something that should be served at a holiday or special occasion. It was 5 stars as it but next time I will decrease the sugar to make it less sweet and more savory and decrease the butter to make it healthier.

Turkey Breast with Gravy

This turkey came out so moist and tender and it was seasoned perfectly. I used the recommended seasoning but I just added a little more. This was the easiest and best tasting gravy I ever made. I guess the secret is the bouillon cube.

BBQ Glazed Homemade Meatballs

I want to serve these as an appetizer at a dinner I’m hosting next week so I made them today as a test. They passed the test and are possibly the best meatballs I’ve ever had. Can’t wait to serve them to my guest.

Zesty Chicken Meatloaf

This was okay. I think 1 ½ cups of bread crumbs is too much. It made the loaf dry and gave it a processed taste. The bread crumbs also overpowered the other flavors. May try again but will decrease the amount of bread crumbs.

Salsa Chicken

The taco season gives this chicken a nice taste. I like the fact that I can prepare it quickly after a busy day at work. My whole family enjoyed it and the leftovers were great too.

Cafeteria Macaroni and Cheese

Macaroni and Cheese is the one dish I’ve never been good at making – that is until now. This recipe is delicious. It made too much for a 2 quart dish so I used my Pampered Chef round baker. Not sure if that can go in the broiler so I omitted that step. I also decreased the butter a tad. I can’t wait to make this again but I will definitely eliminate the bread crumb topping as my family didn’t care for that part.

Johnny Cake

I’ve never had Johnny Cake before so I’m not sure if this is supposed to be like cornbread or cake. I was looking for something more like cornbread and less sweet. I decreased the sugar to ¼ cup but it was still sweet. I like the consistency of this bread and it had a good taste. I will make again but serve for breakfast instead of with dinner.

Southern Fried Cabbage

This is delicious. I didn’t use the vegetable oil but otherwise followed the recipe exactly. My husband who doesn’t care for cabbage enjoyed it and my kids gobbled it up.

Spicy Cucumber Soup

This is very good. I love spicy food but I have to admit that this is just a tad bit spicy for me. I will make again but I will go easy on the spice. I didn't have any sesame oil but it still tasted good.

Corn Dog Muffins

I'm always looking for recipes that are easy enough for my 10 year old daughter to cook by herself and that both of my children will enjoy. Although this did not appeal to me, both of my kids enjoyed it. My daughter can't wait to make it again.
