To Die For Blueberry Muffins

Reviewed: Feb. 24, 2010
These are by far the best muffins I’ve ever made. They taste like the expensive muffins I used to buy at the coffee shop when I used to work downtown. My kids loved them and are already begging me to make more since the 9 I made today are already gone.

Kona Chicken

Reviewed: Jan. 26, 2010
I love the idea of using a slow cooker and having my meal done when I get home from work. Unfortunately I don’t always have great results with my slow cooker. Not so with this, the chicken had a nice texture and taste. I agree that it could be tweaked somewhat to give it more flavor but overall it was a hit.

Cube Steak Parmesan

Reviewed: Jan. 26, 2010
I found this recipe to be quite tasty. My steaks were a little tough but good just the same. My family enjoyed this and I will make it again.

Green Slime Smoothie

Reviewed: Jan. 12, 2010
This was very good and I like the fact that I didn’t need yogurt. I didn’t have a banana so I used an orange instead. It was really thick and looked just like the name implied but it was oh so yummy and nutritious that I will definitely make again.

Broccoli Chicken Stir-Fry

Reviewed: Jan. 6, 2010
This was pretty bland but it was easy to prepare and easy to adjust to suit ones taste. I used a little less bouillon because I’m concerned about sodium intake, which may be the reason it was bland; therefore I’m giving this 4 stars. I’ll make again but will add different seasonings and less water.

Classic Red Velvet Cake

Reviewed: Dec. 26, 2009
I’ve never had red velvet cake so I’m not certain how it should taste. I didn’t really care for this but my family loved it and my guest who have tasted red velvet cake before said it was really good, hence the four stars. I did like the frosting and the presentation was nice.

Cauliflower Casserole

Reviewed: Dec. 20, 2009
This was very tasty and easy to prepare. I omitted the butter to save a few calories and it still came out delicious. I like the red pepper flakes and would have never thought to add them on my own.

Tomato Spinach and Basil Soup

Reviewed: Dec. 19, 2009
This soup is good. It’s snowing here today and my kids enjoyed this with a grilled cheese sandwich after playing outside. They don’t care for spinach but they had no problem eating it in this soup.

Thanksgiving Leftover Casserole

Reviewed: Nov. 30, 2009
I appreciate this idea on how to use leftovers but we found this to be just okay. The recipe does not make much (which is good) and can be prepared in a two quart casserole dish. We didn’t like the stuffing on top and ended up scraping it off. My son got the good idea to add bacon bits to his and that actually made it palatable. I doubt if I will be making again but if I do I will certainly use bacon bits on top instead of the stuffing.

Luscious Lemon Cake

Reviewed: Nov. 8, 2009
This cake is pure lemony goodness. I don’t usually like box cakes but this has a homemade taste. I used ¼ lemon juice with the water. I thought it would be nice to pour the glaze on the top but that would have just made a sticky mess. I was skeptical about pouring the glaze on the bottom but it worked perfectly and seeped through the entire cake without making the cake soggy. My entire family loved this and have already requested that we make it again soon.

Italian One Step Casserole

Reviewed: Oct. 18, 2009
We enjoyed this. I browned the sausage first but otherwise followed the recipe. I used a good quality, spicy Italian sausage which added to the success of the recipe.

Sarah's Applesauce

Reviewed: Oct. 18, 2009
This applesauce is so easy and delicious. I needed to use up some apples that a friend gave me. I used granny smith and found ¼ cup sugar to be just right. We ate it warm as a side dish with dinner and of course it tasted even better the next day when it was chilled. I will be making this regularly from now on.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

Reviewed: Sep. 14, 2009
My husband always cringes when I pull out my crock-pot because for some reason most things I cook in it taste a little off. Not so with this dish, it was superb! I soaked my bean overnight and I followed the suggestion of other reviewers and used less water. I added a bay leaf and I also followed Ernid’s suggestion of ham bouillon in lieu of the ham hock. My kids loved it too. Thanks Melissa for a great recipe.

Slow Cooker Beef Roast

Reviewed: Sep. 13, 2009
This was okay and I had all of the ingredients on hand. I’m not certain that the bbq sauce was necessary. It didn’t seem to add to the taste. Overall the meat was flavorful and tender.

Gingered Pork Stir-fry

Reviewed: Aug. 30, 2009
This turned out pretty well. I used fresh ginger because I had some on hand. I didn’t have pimentos but I don’t think it made that much of a difference.

Absolutely delicious! Lucky for me I had friends over for game night, otherwise my kids and I would have eaten the whole batch. Thanks for a great recipe.
