Oven-Roasted Asparagus

This turned out perfectly. The asparagus tasted good and it had a nice texture. I used garlic powder instead of garlic and I didn’t have the lemon juice. Since the Parmesan cheese was optional, I just sprinkled a little on top.

Green Beans Italiano

I enjoyed this. I liked the texture of the green beans and I found the dish to be very flavorful. The fact that it is very simple to prepare is an added plus.

Slow Cooker Island Beef

Pizza Pinwheels

These were a hit with my kids. We brushed on a little pizza sauce and then followed the recipe exactly. I used store brand crescent rolls and I didn’t have any mess. I paired this with a salad and my kids had a quick lunch that was fun to make.

I enjoyed this but found the texture to be a little too soft. I know it's mostly whipped cream but I would like it to be a bit more firm. Maybe freezing it would help.

Roasted Portobello Mushrooms with Blue Cheese

Overall I thought this was good but I think I would prefer it with a milder cheese like mozzarella. I used lite soy sauce but otherwise followed the recipe. I will make again but next time I will spray the pan first as they were a little difficult to remove.

Cereal Bowl Egg and Cheese Breakfast Burrito

My 12-year-old daughter made this for her and her brother this morning. I didn’t taste it but they raved about how good it was. She added a tad of salt and some pepper. The egg needed a total of 1 min 20 seconds to cook. Both of my children thought it was delicious. This is an easy weekday meal that my daughter can prepare before school.

Oven-Fried Catfish

I sought out this recipe after seeing an ad for catfish on sale at my local market. When I got there they didn’t have catfish so I bought flounder instead. This recipe works great with flounder. The fish came out crispy on the outside and flaky on the inside. I loved the texture and the taste. I did follow the advice of other reviewers and I cut the salt in half. This recipe is a keeper.

Teriyaki Kabobs

I omitted the seasoned salt because soy sauce has a high sodium content. I also used fresh ginger since I had some on hand. The results were wonderful and my family truly enjoyed this treat. We had as much fun making these as we did eating them.

This salad is absolutely delicious. The flavors meld together wonderfully. I halved the recipe to see if we would like it. Potato salad used to be my signature dish but I am definitely taking this to the next cookout.

Leftover Chicken Croquettes

We enjoyed this. I used two leftover baked chicken breasts. They were already well seasoned so I omitted the salt. It was a great opportunity for me to use my food processor. I just put everything in the processor, pulsed a few times and it was well mixed. Like others have said, it is a great base. Next time I may add green peppers, celery and raw onions instead of sautéed.

Kelsey's Favorite Stuffed Green Peppers

I had extra peppers to use so I just cut off the tops and used eight peppers. I like the idea of halving the peppers for times when I don’t have as many peppers on hand. I added a little crushed red pepper but otherwise followed the recipe exactly. I served it for Mother’s Day dinner and it was enjoyed by all. It also made a nice presentation. It’s easy enough to prepare for a weeknight meal too.

Blackberry Apple Pie

This was absolutely delicious. I had some gala apples (which are not really great for pie) and some blackberries that I needed to use. The pie was wonderful and I can only imagine how good it will be with the right apples. I forgot the last step of sprinkling the crust with sugar but I didn’t miss it. I served this with some vanilla ice cream and it was a huge hit.
