Zesty Tomato Soup for One

I give this recipe three stars for ease of preparation. I doubled the recipe; put all of the ingredients in my Vitamix and I had piping hot soup in six minutes. As for taste, it is sorely missing something. I added some basil but even that didn’t help. Probably won’t be making this again.

Roasted Red Pepper Soup

This was delicious and easy to prepare in my Vitamix, although I did have to cook the tortellini separately. The tortellini made this hearty enough for me to eat for dinner by itself. The soup is delicious and I would omit the pasta if serving with a sandwich or something else. I didn’t have oregano and my peppers (what I had on hand) had dill and garlic added. I rinsed the peppers but there was still a hint of dill which did not add to the taste of the soup. Next time, and there will be a next time, I will either roast my own peppers or use a plain bottled variety.

One-Dish Rockfish

This is pretty good but I didn’t care for the dill flavor. I will make again without the dill. I enjoyed the ease of preparation and all the added nutrition.

Johnsonville® Three Cheese Oven-Roasted Pasta Primavera

This was delicious and so easy to prepare. I served it over whole wheat linguine and even my picky husband enjoyed it. The chicken sausage was tasty but I may make this again without any meat at all.

Simple Turkey Chili

This chili is good but the recipe calls for too much water. I used 1 ½ cups of water but next time may use a little less than a cup. I didn’t mash the beans but otherwise followed the recipe as written and the dish was enjoyed by all.

Purple Monstrosity Fruit Smoothie

I love this recipe. I made it twice this week, once with vanilla and once without, and I think I prefer it without. I like the fact that this smoothie doesn’t call for yogurt or any dairy products. Also didn’t know that bananas could be frozen. I was leery about that but found that the banana froze nicely, no browning. It was easy to cut the banana peel with a knife. Wish I had this recipe when a friend gave me tons of bananas last spring.

Butter Snow Flakes

These cookies are delicious. They work very well in a cookie press as the dough stays firm. I also made some without the press and both batches turned out great. The orange zest gives them a nice taste. This recipe is definitely a keeper.

Grilled Chicken Over Spinach

I like anything that I can prepare quickly after a busy day at work. The fact that it is healthy is an added plus. Everyone in my house enjoyed this. Next time I will double or even triple the amount of spinach for my family of 4.

The Best Sweet and Sour Meatballs

Even with less sugar, these were too sweet for my taste and they didn’t go well with rice. They did appeal to my children and they may also be good as an appetizer.

Sweet and Spicy Stir Fry with Chicken and Broccoli

I thought this was very good. I didn’t have any chicken stock so I used water. Otherwise I followed the recipe exactly. I make stir fry often and my daughter thought this was the best.

Chicken Enchiladas I

This was really good. Like others I omitted the water and used green chilies instead of the green pepper. I also added some jalapeño pepper. The kids had fun helping me cook and assemble this. We will make it again.

Easy Pepper Steak

This is pretty good and very easy to prepare. I added a dash of gravy master browning sauce just to give it a nicer color. I used low sodium broth and soy sauce and it was still pretty flavorful. I’ll be making this again.

Delicious Ham and Potato Soup

This soup is restaurant quality. I can certainly see how the recipe made the hall of fame. I was surprised at how easy the roux was to prepare. My soup had the right consistency and it was easy to prepare. I omitted the salt and it still tasted great.

Tangy Ham Steak

This was just okay for me. I like the fact that it called for ingredients I already have in my pantry. I think the ketchup taste was a little overpowering. It wasn’t awful but probably won’t use this recipe again.

Awesome Broccoli Marinara

Like others I added balsamic vinegar as I couldn’t find it the type of tomatoes listed in the recipe. The flavors go together nicely and the dish is very easy to prepare.
