This was pretty tasty but it did require some tweaking. I found 2 eggplants to be more than enough for my family of four. I added basil and Italian seasoning to the tomato sauce and I found that the eggplant needed to cook for about 10 minutes on each side. I used park skim mozzarella slices because that's what I had on hand and I like the way they melt (the cheese gets nice and done like I like it). I will make it again.

Sorta Salisbury Steak

I made this today and my family loved it. Like other users, I seasoned the meat before dredging in flour. I also added mushrooms. I like the fact that after browining,the dish pretty much cooks itself. I popped it in the oven and then went shopping. When I came home, it was ready and delicious.
