Spicy Black Bean Cakes

These turned out really good. I agree with others that the spices can be kicked up just a notch. I am trying to eat more vegetarian meals so these were perfect. My kids, who are not joining me on my quest, liked them too.

Marrakesh Vegetable Curry

This was a very filling and nutritious meatless meal. I like the fact that my children loved it and asked for more. I omitted the almonds due to allergies and the raisins because I didn't have any. I used kale instead of spinach because that's what we had on hand. Other than those changes, I followed the recipe and I liked the finished result. This makes a lot.

Grilled Tilapia with Mango Salsa

I’m trying to expose my children to different foods and this was a great recipe for that. They’ve had mango but not like this. The dish was colorful, tasty and enjoyed by all.

Carrot Salad

This is good and simple to make. I omitted the almonds due to food allergies and added raisins as other suggested. I used less honey than the recipe called for and it was still too sweet. I’ll adjust that next time as I will be making this again.

Simple Strawberry Sauce

My market had a great sale on strawberries but since they are not in season, they weren’t very sweet. I used a little less sugar than this recipe called for and it made the strawberries taste like they were freshly picked.

Beef or Chicken Marinade

I am eating less chicken and meat but I did have a small taste so that I can give an honest review. It makes a great marinade for chicken but a little too sweet, next time I’ll use less honey. My family loves it.

Refried Bean Roll-Ups--Lighter Recipe

I’m not sure if opening a can of beans and a jar of salsa can be considered cooking but I do know that the few ingredients combined in this recipe taste great. I topped mine with grilled onions and peppers instead of lettuce. Very easy and delicious. Paired with some yellow rice and salad and I had an easy weeknight meal.

Butternut Squash Soup with a Kick

This soup is so good. I didn’t have coconut milk and didn’t want to use evaporated milk so I used almond milk. I used vegetable broth instead of chicken and I omitted the sugar. The soup was creamy enough as is so I also omitted the sour cream. I know I made some changes but I think the soup would be five stars without the changes. I will make again.

Insanely Easy Vegetarian Chili

Roasted Chickpeas

I enjoyed this. I used one tablespoon of olive oil and I probably could have gone heavier on the cayenne pepper. I lined my baking sheet with parchment paper for easy cleanup. Great for snacking.

Lentil Soup

This was absolutely delicious. I was a little skeptical at first because most of the water cooked out and the lentils seemed gummy. I fixed this by adding an additional two cups of water. I used a little salt and lots of black pepper and the end result was great. I will make this often as it is easy, tasty and super nutritious.

Cheese's Baked Macaroni and Cheese

This was pretty good but could stand to be kicked up just a notch – maybe some paprika or ground mustard. I personally didn’t care for the sausage but my kids like it so I added it. I used extra sharp cheddar cheese which was very good in this recipe. The only change I made was to add French fried onions on the top five minutes before removing from oven instead of the bread crumbs. My family really enjoyed this and asked that it be added to our rotation.

Shrimp and Grits for the Displaced Southerner

This is absolutely delicious. I followed the recipe for the shrimp exactly but I forgot the cheese but I don’t think it really needed it anyway. It had the perfect level of spiciness and was just darn good. I went to three markets and could not find the stone corn ground grits so I used hominy grits and prepared according to the package. It was delicious with the hominy grits so I can just imagine how good it would have been prepared as directed. Will be making this often.

Sweet Potato Enchiladas

This is probably one of the best recipes I tried from this site. I used a leftover baked sweet potato from a restaurant and two whole wheat tortillas. Other than those two changes, I followed the recipe and adjusted the seasonings accordingly. I had no idea of what to expect as far as taste and boy was I wonderfully surprised. This is absolutely delicious and something that I will make on a regular basis. Thank you for sharing this superb recipe!

This dish is quite tasty as written but I did cook my potatoes a little longer than called for. I also added some water to soften the potatoes. Not sure if the potatoes are supposed to be soft as I have never had this before, but softer suits my family’s taste much better. This was filling enough to eat alone for my meatless Monday meal and it paired well with baked chicken for the rest of the family.
