Downeast Maine Pumpkin Bread
I will never buy the costco pumpkin bread mix again! This is hands down the best! The only changes I made - I used 2 9x5 loaf pans not the 3 small ones they list. This changed the length of the cooking time by an additional 20 - 30 min. I just kept retesting every 10 min after the 50 min listed on the recipe. The other thing I did is added a little more spice to give it a bit more punch. I added 1 teaspoon pumpkin pie spice which is pretty much the same spices listed in the recipe so if you like a bit more flavor you could either increase the listed spices or to make it easier just add 1 t of the pumpkin pie spice. And I like nuts in my breads so I added 1 cup of chopped pecans. These cooked up beautifully which was great because I made these and a few more things for my husband to take over the New Years mission he and his soldiers had to attend. He reported rave reviews from the Colonels on down on all items I made and many request for recipes. I will gladly share this recipe and the others I made.

Banana Banana Bread
Bread is to die for! Bread is moist and flavorful. By far out does any other banana breads I have ever made. Only change made was I add 1/2 c chopped walnuts. This will be my recipe of choice from now on. The only things I might try is adding some spices, not that is need it.
