Chef John's Shrimp and Grits

I have used this recipe as a base two times now. Hubby has ulcers and horrid reflex so I have to tame down the hotter ingredients. I don't keep Cajun seasoning on had so I use a spicy Italian seasoning grinder. It has just the right about of kick for us. I also found out tonight that it you don't have green onion, white onion works too. I will definitely keep this recipe around.

Quinoa Black Bean Burgers

This is a great place to start for Meatless Monday. I didn't have hotsauce or bell pepper so I added other seasonings, which I should have added more than I did. I increased the quinoa to 2/3 of a cup. Great blackbean flavor, great texture. Web good the next day on a sandwich with some cheddar and sour cream. Hubby and I are die hard carnivores and this went over well.

Million Dollar Pie III

My husband demands that his aunt bring this pie (sub fruit coctail for pineapple and add coconut) for either Thanksgiving or Christmas every year. This year he didn't get one, so I'm surprising him for his birthday!

Sarah's Banana Bread Muffins

It's a good starting point. I took some advice from others and cut back the sugar to 1/2 cup an added some vanilla. Still just a tad bland. Next time I will probably try brown sugar.

Fluffy Pancakes

Great place to start for fluffy banana pancakes! The only changes I made were to add two smashed bananas and another 1/3 cup flour. I mixed my sour milk the night before and let it sit in the fridge over night and it still worked perfectly.

Peanut Butter Chip Chocolate Cookies

Nice mild flavor. I didn't have peanut butter chips so I used 1 cup mini m&m's and 1 cup crushed walnuts. After the first batch came out a little on the raw side I upped the cooking time to 10 minutes. Good recipe and cookies don't spread much, even if you don't refrigerate the dough beforehand.

Butternut Squash Casserole

This was a really good place to start. I agree with other reviewers, microwaving then boiling is redundant so I have switched to roasting my squash. Roasting preserves more nutrients and flavor. I added several shakes of cinnamon, nutmeg, allspice, Ginger, and ground cloves to punch things up a bit. I cut the white sugar down to one quarter of a cup because of the whole cup of brown sugar in the topping, and I actually like the taste of the squash without making it overly sweet. For the topping I substitute about a cup and a quarter of rolled oats( Sometimes I throw in a handfull of crushed pecans too!)

Guinness® Bread

This is a great quick bread, and my only advice is to make sure the butter is well blended into everything before you mix the beer in or make sure the beer has come to room temperature or the butter will solidifyand not mix in very well. I love making this bread when my hubby doesn't finish a 6 pack.

Robbi's M&M Cookies

With a couple of minor adjustments this is my go-to cookie recipe. Swapping out the margerine for butter really makes the cookie part much more flavorful and I add a full 2 teaspoons of vanilla flavoring. One step I would add to the directions is to refergerate the dough until good and cold. I usually mix one day and bake the next and those batches never flattened out the way the batch I put straight into the oven did. I also usually cut out the 1/2 cup of white sugar because I prefer a less sweet cookie. Although I have yet to try it, I suggest adding less butter or sugar for those having problems with their cookies spreading too much.
