I never was interested in cooking until I reached my mid 50s. There were things I could throw together without a recipe but I never wanted to bother with cookbooks and recipes. Only recently have I gotten brave and tried a few recipes. After a little success, I felt encouraged so I tried a few more.

Pinwheel Meatloaf
We tried this recipe tonight and really loved it. My husband is a picky eater and rarely rates anything higher than "not bad". He took a few bites of this meatloaf and said "That's pretty good!" He says we can put it on our favorite recipe list! I also wanted to add that you have to be really dilligent about squeezing all of the liquid out of the spinach or your meatloaf might fall apart. I learned that the hard way with other recipes that call for frozen spinach.

Texas Sheet Cake V
Yesterday was my husband's birthday and I hadn't been able to prepare in advance for anything because I'd been sick. I wanted to bake him a cake that would be special. Decided to try this recipe and boy was it a hit! This will definitely be on our favorites list from now on! Like other reviewers have said, I used a 9X13 pan because that was all I had. It took a little more than 20 minutes to bake because it was deeper. Also, I wish the recipe said to melt the butter for the icing before you put in the milk and cocoa. I'm not a great cook and didn't think to do that. I just put it all in the saucepan at once and cooked it and the icing curdled a little and separated. But once I put the confectioners sugar in, it all blended ok. I was glad other reviewers had said to spread the icing on the cake quickly as soon as it came out of the oven. My thought was to let the cake cool first. It pays to read the instructions! :)

Hamburger Steak with Onions and Gravy
Made this recipe last night and loved it! It was raining outside and I'm sick with a cold so I wasn't about to go out to the grocery store for anything. Did a search by ingredients. All I had to work with was some ground beef and I did have some onions. Found this recipe and I had all the ingredients except the cooking sherry. I used red wine vinegar like another reviewer suggested. This recipe will definitely be on our favorites list! When I first cut into the "steak" with my fork, I thought maybe it wasn't done because it cut so easily. But it was done and it just about melted in my mouth. So good. The gravy had a great flavor and our house smelled awesome! I will say that there's no way you can get eight patties from a pound of ground beef. Those would be meatballs. LOL I did four. There's just two of us so we get to have it for dinner again tonight! :)
