Slow Cooker Latin Chicken

This is great. I skipped the cilantro, used two cups chicken broth, and served over couscous. I made it on the stove top in a dutch oven. I only cooked it for a couple hours and it came out VERY tender. It's a keeper.

Quick Stuffed Tomatoes

This was okay but I'd make the orzo and forget stuffing it into a tomato. I added roasted red peppers, fresh cilantro, parmesan, pine nuts, and garlic powder to the recipe. The tomato didn't really do anything except provide for a nice presentation. I roasted it with the top on which gave it visual appeal.

Chinese Cabbage Salad I

This was a great salad. I used used a 1/4 C olive oil and a tablespoon of sesame oil, 1/4 C sugar, and 1/4 C red wine vinegar for the dressing and it was plenty for the salad.

Country Apple Dumplings

This was great! I halved the recipe and everything turned out fine. Next time I'll cut down on the butter (1/3 C for half batch) and reduce sugar to 1/2 C (for half batch). I doubled the cinnamon and added 1/4 tsp of nutmeg. This was great and so easy.

Chocolate Bar Fondue

So easy but it makes a lot of fondue. I made homemade candy bars out of our leftovers. In a greased baking pan I layered chocolate, rice crispies cereal, melted caramels and more chocolate. I put this in the refrigerator and served it the next day.

Brie Cheese Appetizer

My guests loved this! I bought a wedge instead of a round cheese and cut it in half to form a rectangle. This worked out great and was easier to wrap with the pastry. I would liberally butter the cookie sheet as I had a hard time removing it without breaking through the puff pastry. I also trimmed off the excess rind on my brie. The combination of the apricot preserves and cheese had an incredible flavor. I would definitely make this again.
