Pan Seared Red Snapper
Excellent. But I suggest you DOUBLE the serving size, 'cause four ounces will not be enough of this delicious recipe! I substituted fresh lime juice at two thirds ratio for a brighter flavor.

Pork Chops Stuffed with Smoked Gouda and Bacon
I have made this three times, all with pork tenderloin, using metal skewers to close the tenderloin, and cooking on the grill. Excellent! And beautiful on the plate, sliced into roulades.

Cornish Game Hens with Garlic and Rosemary
This recipe was excellent, I wondered why so many garlic cloves, but when you taste the flavor you will know! Sauce was a bit thin, though, so reduce a bit longer or thicken.
