Oysters Rockefeller

Reviewed: Mar. 28, 2008
This is an amazing recipe. Perfect in everyway. I used "Pernod" that I bought to cook food from recipes I got on a cruise ship.(27.00 a bottle) I was thrilled I had this anise flavored alcohol for this recipe. I had everything on the recipe but oysters in the shell. I used a glass of fesh oysters from Costco.I cooked the oysters in a frying pan with olive oil and garlic than cooked spinach in sauce left in the pan. I want to try shell oysters next. I first had Oyster Rockefller at Jake's Fish House in Portland, Oregon. This recipe is just as good and a whole lot cheaper. I would not change a thing but I would not use my Vita Mix blender next time since it made the mixture soupy. I will use my small Cuisnart to just chop the mix..

Mom's Oyster Stew

Reviewed: Dec. 19, 2007
Simple easy and fast. I didn't have sherry wine. I took three oysters and put them in blender, blended them very fine and added them to the milk for a strong oyster taste. I didn't like to use two pots for this soup. My husband didn't mind washing an extra pot since he loved the soup.

Roasted Pear Salad

Reviewed: Dec. 24, 2007
This salad will not appeal to everyone but we raise hazelnuts in Oregon and roasted pear salads are very popular. This recipe needs spinach green and blue cheese. Poultry sliced thin is great too. Try it!!! I love it with spinach and strong favored cheese. Play with the vinegar-honey ratio. Know your eaters-some people hate too much of either one of these.

Tangy Mango Slaw

Reviewed: Jul. 25, 2006
The combination of cabbage, mangos, and walnut was very good. The recipe called for too much dressing. I'm thinking of making the dressing a little different with something other than just vinegar. The dressing was a little tart.

Lemon Pepper Pasta Seafood

Reviewed: May 6, 2009
Very fast and tasty. I used Trader Joes Lemon Pepper Pasta. This pasta is very yummy and good by itself. I use frozen cleaned and peeled shrimp for the ease of making the dish. Much lighter than cream and parm sauce.

Classic Thumbprint Cookies

Reviewed: Jan. 24, 2010
I'm not a cookie maker but I made these cookies and found them delicious. I'm wanted to use up my own freezer jam. I strained out the extra liquid and use it for the filling. That all worked great. Thanks.

Parmesan Spinach Balls

Reviewed: May 25, 2008
I made these with seasoned boxed stuffing mix and cooked fresh spinach. I rolled the cooked spinach in dish towel to get the extra moisture out after it was cooked and let the hot spinach melt the butter.I took them to a party with my favorite dip. Made with mayo, lemon juice, salt, pepper, and curry powder to taste. Everything was enjoyed by all. Most people hate to try things that look different so I had to put a sign by them.

Split Pea and Ham Soup II

Reviewed: Dec. 31, 2009
I chopped all the vegetables very small. Plus I added celery again chopped very small. I really like the fact that plain water was not added to the soup. Instead the liquid was ham stock. I skimmed off the fat from the ham stock before adding it to the soup. And added back a portion of this stock to the vegetables and peas to eye ball the correct amount for the pea soup. I saved the extra ham stock to the side to add if needed to get the correct soupiness of the spilt pea. My husband hates vegetables- carrots/celery but since they were so small he didn't object. Plus I soaked the peas in stock while the vegetables were cooking. Very easy and fast for split pea soup.We both loved it. thanks..

Slow Cooker Turkey Breast

Reviewed: Jan. 8, 2009
I never cooked turkey in the slow cooker and it turn out just right and very moist. If you are following this recipe I would not run out to buy onion soup mix. I did use the mix myself since this recipe with the french onion soup mix is also on the turkey grower web page. How ever, next time I'm using my favorite turkey rubs and filling the bird with onions, garlic and other good stuff. The recipe is great because of the cooking process.

Spanakopita (Greek Spinach Pie)

Reviewed: Jun. 1, 2008
I love spinach so this recipe tasted good to me- just the way it is. Used as side dish with meat. Very good. I used fresh spinach and I did cool the mixture in strainer to drain liquid before adding it to egg mixture. Great dish! as is.

I wouldn't add sugar to this recipe it is perfect as is. I the only problem I had was eating too much of it. If you shp at costco and get the mega bag of spinach what can you do with all of it? make this salad for your friends and family.

it’s over !! you and me, us, I’m just plain tired of you- even though you got dicey and spicy at lunch with soup recipe. Yes, of course you were tasty and handsome, maybe just a little stuffy. Hey! don’t blame it on me being in a foul mood or not. To tell you the truth, Tom T, you were leftovers the day after your timer popped. No hard feelings, You are and always will be VIP. Very tasty. I cooked the chicken and vegetable in stock I had made earlier and keep frozen.I used this stock drained off the chicken and vegetables for the chicken stock called for with this recipe. Why throw it away? The pie turn out just right- very tasty and not saltly.

Yeast Dumplings

Reviewed: May 8, 2010
I liked these very much. I had to come up with something different from Bisquick dumpling since we were out of Bisquick. I liked them better..my husband still likes Bisquick dumplings. I'm sure it's because they are salty.
