Tomato Spinach Salad

all I had for a salad was spinach and tomatoes so this recipe was handy. I enjoyed the flavor of these ingredients together. I'm adding this salad to my list of salads to make in the future. My husband hates spinach but he almost licked the bowl clean because he loved the dressing. Maybe next time I'll serve it with another lettuce for him but not for me.

Followed the recipe right down the line. I did roast the peppers. I roasted and peeled the pepper. Looks pretty and tasted great.Thanks!!

Spanakopita (Greek Spinach Pie)

I love spinach so this recipe tasted good to me- just the way it is. Used as side dish with meat. Very good. I used fresh spinach and I did cool the mixture in strainer to drain liquid before adding it to egg mixture. Great dish! as is.

Parmesan Spinach Balls

I made these with seasoned boxed stuffing mix and cooked fresh spinach. I rolled the cooked spinach in dish towel to get the extra moisture out after it was cooked and let the hot spinach melt the butter.I took them to a party with my favorite dip. Made with mayo, lemon juice, salt, pepper, and curry powder to taste. Everything was enjoyed by all. Most people hate to try things that look different so I had to put a sign by them.

Coconut Shrimp I

If you are hungry for coconut shrimp ...this is the recipe. I enjoyed tasting the shrimp flavor with coconut. Very often when you cook shrimp other flavors take over and hide the great flavor of shrimp, but not this recipe. I made the sauce suggested by someone(orange) and that was great on the shrimp and the rice dish I served it with. I'm adding this recipe to my file-thanks

Blueberry Dump Cake

Thsi recipe is wonderful (easy). I grated frozen butter over the top of the cake mix for an even topping. My brother gives us blueberries each year from the family farm. I'm hard press to use them all- this recipe will help because it turns out just right. I agree as mentioned by others not to add the sugar to the blueberries. However, I did added sugar because I wasn't sure if the sugar breaks the blueberries down to make the cake mix cook correctly. We found it very sweet. But still very good. Next time less sugar for us.

Oysters Rockefeller

This is an amazing recipe. Perfect in everyway. I used "Pernod" that I bought to cook food from recipes I got on a cruise ship.(27.00 a bottle) I was thrilled I had this anise flavored alcohol for this recipe. I had everything on the recipe but oysters in the shell. I used a glass of fesh oysters from Costco.I cooked the oysters in a frying pan with olive oil and garlic than cooked spinach in sauce left in the pan. I want to try shell oysters next. I first had Oyster Rockefller at Jake's Fish House in Portland, Oregon. This recipe is just as good and a whole lot cheaper. I would not change a thing but I would not use my Vita Mix blender next time since it made the mixture soupy. I will use my small Cuisnart to just chop the mix..

Lori's Famous Crab Cakes

I tried another crab cake recipe and it was awful. This one was really good. I added celery because I like it. I made them small as suggested. I used canned crab meat. Now I'm ready to try fresh crab when I have it from the Oregon Coast. Fresh crab is so yummy by itself why waste it in crab cakes...but if we catch lots I'll try it.

Roasted Pear Salad

This salad will not appeal to everyone but we raise hazelnuts in Oregon and roasted pear salads are very popular. This recipe needs spinach green and blue cheese. Poultry sliced thin is great too. Try it!!! I love it with spinach and strong favored cheese. Play with the vinegar-honey ratio. Know your eaters-some people hate too much of either one of these.

Garlic Dill New Potatoes

I followed the recipe exactly. And I didn't care for it. I didn't know from the direction if this was a cold salad or a hot salad. Since it had butter, I served it warm. I had a lot left over so I'm going to pan fry the left overs for lunch. I did love the steamed potato idea -the potatoes were just right after steaming for old fashion potato salad with eggs.I used the bamboo two level steamer which keep them cooking even.

Marinated Grilled Shrimp

This the best recipe to date that I have made from all recipes. I love shrimp so that might be why. I made the grilled shrimp for Christmas dinner with my George Foreman Grill. And served the skewers placed over whole grain Rice-Roni. They looked beautiful together. Rice has a reddish color and the shrimp was reddish. It was only thing I served that went the faster with nothing left over. Don't change a thing!!!
